3 TBS peanut butter
1/2 cup shortening
1/2 cup butter
2 cups flour
1/2 tsp salt
1 tsp baking soda
1 cup quick cooking oatmeal

PREHEAT oven to 325 degrees and lightly spray a 10x15 pan with oil.

Sift the flour, salt and soda together in a bowl. Add oatmeal and mix well. Add first 3 ingredients, working in as for pie crust. Pat dough into prepared baking pan and bake for 20 to 25 minutes. While slightly warm, frost with fudge icing (recipe below) and cut into bars.

Fudge Icing
1 oz chocolate
1 cup sugar
1/3 cup milk
1/4 cup shortening
1/4 tsp salt
1 tsp vanilla

Mix all ingredients together in saucepan and bring to a boil; stirring constantly. Boil for one minute and remove from heat and set in a pan of cold water. Do NOT stir while cooling to lukewarm. Add vanilla and beat until thick enough to spread.

1 cup brown sugar
1/2 cup shortening
1/2 cup peanut butter
1 egg
1 tsp vanilla
1-1/2 cups flour, sifted
1 tsp baking soda
1/4 tsp salt
1/2 cup quick cooking oats

2 TBS butter
2 TBS peanut butter
1-1/2 cups powdered sugar
dash salt
2-1/2 TBS milk

PREHEAT oven to 375 degrees. Grease a 10x15 pan and set aside.

Cream together the first five ingredients. Sift together flour, soda, and 1/4 tsp salt. Add to creamed mixture; mix well. Stir in the oatmeal and pat firmly into the prepared baking pan. Bake for 12 to 15 minutes. Cool and frost with the remaining ingredients. Makes 3 dozen bars.
