Best Peanut Butter Bars Recipe
from Scratch


I have wonderful homemade peanut butter bars recipe that you will treasure.  Actually they have a double dose of chocolate and made with oatmeal. They are not Scotcharoos.

Peanut Butter Bars Recipe

RECIPE FOR PEANUT BUTTER BARS

1 cup brown sugar
3 TBS peanut butter
1/2 cup shortening
1/2 cup butter
2 cups flour
1/2 tsp salt
1 tsp baking soda
1 cup quick cooking oatmeal

PREHEAT oven to 325 degrees and lightly spray a 10x15 pan with oil.

Sift the flour, salt and soda together in a bowl. Add oatmeal and mix well. Add first 3 ingredients, working in as for pie crust. Pat dough into prepared baking pan and bake for 20 to 25 minutes. While slightly warm, frost with fudge icing (recipe below) , top with chocolate morsels and cut into bars.


Fudge Icing
1 oz chocolate
1 cup sugar
1/3 cup milk
1/4 cup shortening
1/4 tsp salt
1 tsp vanilla

Garnish
chocolate chips (optional)

Mix all ingredients together in saucepan and bring to a boil; stirring constantly. Boil for one minute and remove from heat and set in a pan of cold water. Do NOT stir while cooling to lukewarm. Add vanilla and beat until thick enough to spread.





HOMEMADE PEANUT BUTTER BARS FROM SCRATCH

1 cup brown sugar
1/2 cup shortening
1/2 cup peanut butter
1 egg
1 tsp vanilla
1-1/2 cups flour, sifted
1 tsp baking soda
1/4 tsp salt
1/2 cup quick cooking oats

Frosting
2 TBS butter
2 TBS peanut butter
1-1/2 cups powdered sugar
dash salt
2-1/2 TBS milk

PREHEAT oven to 375 degrees. Grease a 10x15 pan and set aside.

Cream together the first five ingredients. Sift together flour, soda, and 1/4 tsp salt. Add to creamed mixture; mix well. Stir in the oatmeal and pat firmly into the prepared baking pan. Bake for 12 to 15 minutes. Cool and frost with the remaining ingredients. Makes 3 dozen bars.
