Making homemade potato chips is easy and tastes so much better than store-bought. The family will enjoy these and they are easy to make.

Homemade Potato Chips
A food processor with a slicing attachment is very helpful with these recipes. Experiment with the thickness, you may like them thicker or thinner.
OLD FASHIONED POTATO CHIPS
Ingredients
4 potatoes, sliced paper-thin
1 TBS sea salt (or to taste)
1 quart canola oil for deep frying

Slice potatoes with a mandolin Soak sliced potatoes in hot water for 20 minutes to remove the starch. Dry well. If you want salt and vinegar chips, soak the sliced potatoes in vinegar for
Heat oil in a cast iron pan or heavy skillet to 365 degrees. Fry slices in small batches. Once they start turning light brown, remove and drain on a paper bag. Season with sea salt.
HEALTHIER POTATO CHIP RECIPE
Ingredients
4 potatoes, sliced paper thin
1 TBS vegetable oil or Pam vegetable spray
1 TBS sea salt (or to taste)
Directions
Place oil in a bowl and dip both sides of the chip – place evenly on parchment paper on a microwave safe plate. Do not overlap chips, or they tend to be slightly chewy.
Microwave 2 to 3 minutes on each side. For toppings I have used sea salt, onion powder and cayenne.
You may also spray the chips with Pam cooking spray. It works great and saves those extra calories and fat. Again, sprinkle with Cajun seasoning instead of the salt.
