This is a loaf cake recipe and works beautifully with the meringue.
LEMON MERINGUE CAKE RECIPE
1/2 cup butter
1 cup white granulated sugar
1/2 cup milk (not skim)
1-1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
grated lemon rind from one lemon
one lemon juiced
1/4 cup white granulated sugar

PREHEAT oven to 350 degrees. Spray a loaf pan with oil and set aside.
Cream butter and sugar well and add eggs, one at a time, mixing well after each addition. Add the 1/2 cup milk.
In a separate bowl combine the flour, baking powder, salt and grated lemon rind. Add dry ingredients to the batter and mix together well.
Pour into the prepared loaf pan and bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
Make the glaze by adding the ingredients to a small pan combining and mixing the lemon juice and sugar well. Stir until sugar is dissolved and remove from the stove.
By that time (5 minutes or so), remove cake from the pan and place on a cooling rack. Poke the top of the cake all over with a toothpick and pour the warm glaze over the warm cake. Cool completely.
When completely cool, make the meringue (half of the recipe) and dollop on top of cake, then smooth to the edges. Place under the broiler until light brown. Serve. Enjoy this beauty – it is so addicting!
