2 cups sifted flour
2 TBS cocoa
3/4 tsp salt
1-1/2 tsp cinnamon
1/4 tsp cloves

1/2 tsp nutmeg
1/2 tsp allspice
1-1/2 tsp baking powder
1/2 tsp baking soda
1 cup raisins
3/4 cup finely chopped nuts
1/2 cup shortening (or butter)
1-1/2 cups white sugar
2 eggs
1-1/2 cup homemade applesauce

PREHEAT oven to 350 degrees. Grease and wax paper line a 9x13 pan.

Sift the first 9 ingredients together. Add raisins and nuts and toss to coat.

Cream shortening and sugar together until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add dry ingredients alternately with applesauce.

Pour into prepared baking pan and bake for 50 minutes or until toothpick inserted in the center comes out clean.

This applesauce cake recipe is delightful and spicy - wonder with the caramel frosting. You may use the frosting recipe on the cake above also, if you wish. Don't want to leave him naked do you?


1 cup shortening
2-1/2 cups homemade applesauce
2 cups white sugar
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp cloves
1 tsp salt
3 cups flour
1 TBS baking soda
1 egg

Caramel Frosting
1/2 cup butter
1 cup homemade brown sugar, packed
1/4 cup milk
1-3/4 to 2 cups homemade powdered sugar

PREHEAT oven to 350 degrees. Grease a 9x13 inch pan.

Melt shortening in large saucepan; add applesauce, white sugar and spices. Heat thoroughly. Stir in flour and baking soda. Add egg and mix well. Pour into prepared baking pan. Bake for 40 minutes.

Melt butter in saucepan; add brown sugar and boil over low heat for two minutes, stirring constantly. Add milk and continue stirring until mixture comes to a boil. Remove from heat and cool.

Add powdered sugar gradually, beating well after each addition until you have achieved spreading consistency. Spread over cake.

4 cups flour, sifted
2 lb fruit flavored gumdrops, chopped
1 lb white raisins
1-1/2 cups chopped nuts
1 cup butter
1 cup white sugar
2 eggs, well beaten
1-1/2 cups homemade applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp salt
1 tsp baking soda dissolved in 1 tsp water

PREHEAT oven to 250 degrees and grease a tube (angel food cake) pan.

Sift 2 cups flour over the chopped gumdrops, raisins and nuts; set aside (so they don't float to the bottom of the cake when baking).

Cream butter and add sugar, beat until light and fluffy. Add eggs, one at a time, and beat well after each addition.

Whisk the remaining 2 cups of flour, cinnamon, cloves and salt together. Add to the creamed mixture alternately with the baking soda water.

Fold in gumdrops, raisins and nuts. Bake for 2 hours in the prepared baking pan, and check for doneness with a toothpick.

1 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon
1 cup unsweetened applesauce (recipe above)

PREHEAT oven to 350 degrees and grease a loaf pan.

Cream butter and sugar together for 5 minutes until light and fluffy. Add eggs and nuts; mix well. Sift the cake flour, white sugar, baking soda, nutmeg and cinnamon together three times (secret to make perfect cake).

Add dry ingredients alternately with applesauce to creamed mixture, beating well after each addition. Pour into prepared baking pan and bake for one hour. Serve with homemade caramel sauce.

2 cups flour
1 tsp baking powder
1 tsp baking soda
1 TBS cornstarch
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp salt
1/2 cup butter
1 cup white sugar
1 egg, beaten well
1-1/2 squares chocolate, melted and cooled
1 cup homemade applesauce
1/2 cup water
2/3 cup chopped nuts
1/2 tsp homemade pure vanilla extract

PREHEAT oven to 325 degrees. Grease and flour 8 inch tube pan.

Sift flour, measure and then sift with baking powder, baking soda, cornstarch, salt and the spices. Cream the butter and sugar for 5 minutes. Add well beaten egg and then the cooled chocolate and mix.

Add dry ingredients alternately with applesauce and water. Add nuts which have been dredged in part of the measured flour. Add vanilla.

Bake for 325 degree for one hour. Frost with orange frosting below.


2 TBS butter
1-3/4 cups homemade powdered sugar, divided
1 egg yolk
2-1/2 TBS orange juice
1/2 tsp grated orange rind
1/2 tsp grated lemon rind

Cream the butter with 1/2 cup powdered sugar. Add the egg yolk; mix well. Then add the orange juice, orange and lemon rind, stir to mix. Add remaining 1-1/4 cups powdered sugar. Cream well and frost cake.
