Homemade Agnolotti Pasta Recipe
EASY AGNOLOTTI PASTA FROM SCRATCH
1-1/2 lbs Basic Pasta Dough
Divide the prepared dough into 3 parts and roll each one into a 15 inch circle. Use a round cookie cutter (or a glass) and cut into 2-1/2 inch circles.
Place a teaspoon of filling off center on each circle. Fold the pasta over to form a half-moon and seal the edges with a fork. Place on a lightly floured surface.
Bring 6 to 8 quarts of boiling salted water to a boil. Cook pasta for 6 to 7 minutes and serve with your favorite sauce. I recommend trying the garlic and oil sauce recipe below.
Garlic and Oil Sauce
1/2 cup olive oil
4 garlic cloves, crushed
1 tsp dried basil
1 tsp salt
1/4 tsp black pepper
1/2 cup dry bread crumbs

1/2 cup grated Romano cheese
Heat oil in a heavy 8 inch skillet until it is very hot, but not smoking. Add the garlic and saute until lightly browned but not burned. Discard the garlic.
Add the basil, salt, pepper and bread crumbs; stir to mix well. Turn heat down to low and brown the crumbs for several minutes.
Cook the pasta according to package directions. Drain and place on a warmed large platter. Pour the oil mixture over the pasta, gently tossing to coat evenly. Sprinkle with the grated cheese and serve.
