I love these creamy lemon roasted potatoes. Perfect with chicken, steak or fish. So easy to make and a delicious twist on a classic.
2 pounds baby potatoes, scrubbed and cut in pieces
2 TBS oil
3 TBS fresh lemon juice
freshly chopped parsley
PREHEAT oven to 400 degrees.
Line a baking sheet with foil and lightly oil. Put in the oven to preheat for five minutes.
Place the potatoes in a bowl and add the all the ingredients except the lemon slices; mix. Spread the potatoes out on the hot baking sheet and lay the lemon slices on the other side of the pan. Roast for approximately 10 minutes. Take out of the oven and turn the potatoes and lemons over; bake another 10 minutes. Garnish with lemon slices.
