Peanut Butter Haystack Recipe

1 cup butterscotch chips
1/2 cup peanut butter (creamy or crunchy)
1/4 cup finely chopped peanuts
2 cups chow mein noodles

Spray a bowl with oil and place over a saucepan with simmering water.  Add the butterscotch chips and stir frequently until melted.

Add the peanut butter next and mix and finally the peanuts and chow mein noodles.  Mix well until everything is incorporated.

Put waxed paper either on a baking sheet or on the kitchen counter and take teaspoonfuls of the mixture and drop on the waxed paper.  Let sit to cool to room temperature. 

Transfer to a sealed container and used waxed paper between layers so they don’t stick together; store in the refrigerator.

Recipe Notes

  • Instead of peanut butter, add 1 cup mini marshmallows
  • Replace butterscotch chips with milk chocolate chips or use 1/2 cup  butterscotch chips and 1/2 cup milk chocolate chips
  • Replace peanuts with M&Ms
  • Replace 1/2 chow mein noodles with Golden Grahams cereal.

Chocolate Coconut Haystacks
12 oz semi sweet chocolate
14 oz sweetened condensed milk
In a double boiler or a bowl over a saucepan that has simmering water, slowly melt the semi sweet chocolate and stir in one can sweetened condensed milk.  Remove from the heat.

  1. Stir in 2 cups coconut
  2. Stir in 1 cup chow mein noodles or chopped peanuts
  3. Drop by teaspoonfull onto waxed paper 
  4. Chill until firm
