Homemade Sweetened Condensed Milk from Scratch - Using Coconut Milk

2 cups coconut milk
3/4 cup granulated white sugar (maple syrup is delicious too)
4 TBS salted butter
1 tsp pure vanilla extract

Whisk together and heat over medium low and simmer (do not boil mixture) while stirring until reduced in half; approximately minutes.  Makes approximately 1-1/4 cups.

How to Make a Large Batch of Sweetened Condensed Milk

1 quart milk (or evaporated milk)
1-1/2 cups sugar

Cook the above ingredients in a heavy saucepan over medium-low heat. Whisk constantly until it reaches the desired consistency. It takes 45 minutes for sweetened condensed milk and 1-1/2 to 2 hours to make dulce de leche. Add 1/2 teaspoon of vanilla after removing from the heat. Cool before using.

Sweetened Condensed Milk Recipe


1/2 cup butter (or margarine), melted
20 double homemade graham crackers
1-1/3 cups flaked coconut
1/2 cup chopped nuts
1 cup chocolate chips
1 cup butterscotch chips
15 oz sweetened condensed milk, recipe above

PREHEAT oven to 350 degrees.

Pour the melted butter in the bottom of a 9x13 inch pan, and add the graham crackers. Mix well and pat evenly in the pan.

Sprinkle the ingredients in the order given, starting with the coconut. Pour the sweetened condensed milk over all. Bake for 20 to 25 minutes, or until lightly browned. Cool and cut into squares.
