My meatballs mashed potatoes recipe is one you will grab often. This is one of my favorite cold weather meals. Of course you may add gravy, but I prefer them this way.
Meatballs Mashed Potatoes Recipe
Meatballs
1/2 lb bulk pork sausage
1/2 lb ground beef
1 tsp garlic powder
1 tsp onion powder
1 tsp seasoned salt
1/4 tsp oregano
1/2 cup Ritz crackers, crushed
1/4 cup grated Parmesan cheese
1 egg
2 TBS milk
1 small onion, finely chopped
spinkle with paprika, cayenne or hot red pepper (optional)
PREHEAT oven to 400 degrees. Spray a baking sheet and set aside.
Combine meatball ingredients in a mixing bowl and throughly combine until evenly distributed. Shape into one to 1-1/2 inch balls and place on the baking sheet. Bake for 25 to 30 minutes depending on how big you made them. Want crispy? Bake another 15 minutes.
If you are making a bunch you may double this recipe. The mashed potatoes I suggest are the ones that keep in the refrigerator (I’m thinking leftovers) and still taste fantastic. The recipe is at the link below.
