Homemade Apple Bread Recipe

Quick Apple Bread Recipe

2 cups all purpose flour
1-1/2 tsp apple pie spice (see below)
1/2 tsp baking soda
1/2 tsp salt

3/4 cup vegetable oil
3/4 cup granulated sugar
3/4 cup dark brown sugar 
1 tsp vanilla extract
2 eggs
1/3 cup buttermilk (see below)
3/4 cup chopped pecans (or your favorite nut)
1 cup flaked sweetened coconut
1-1/2 cups finely chopped apple

PREHEAT oven to 300 degrees (yes this is correct) and spray a loaf pan with oil, set aside.

Heat a frying pan to medium high heat and add the chopped pecans.  Toast for a minute or two until fragrant and remove from the heat.

Sift the first four ingredients together in a medium bowl and set aside.  In a mixing bowl beat the oil, white and brown sugar, vanilla and then add the eggs beating for one minute until combined.

Add the sifted dry ingredients alternately with the buttermilk.  Add the nuts, coconut and apple and combine by hand.  Spread batter into the prepared pan and bake for 1 hour 20 minutes to 1 hour 30 minutes or until a knife inserted in the center comes out clean.

Cool bread in pan for 30 minutes and remove to wire rack to cool coompletely.

Recipe Notes

I love to drizzle this bread with white glaze – it is delicious when you heavily drizzle the top of the loaf when it is warm (not right out of the oven).  Here is the recipe:

1-1/4 cups homemade powdered sugar
1-1/2 TBS milk
2 TBS butter, melted and cooled a bit
1/2 tsp homemade pure vanilla extract

Mix all the ingredients together

Apple Pie Spice Mix Recipe

1/4 cup ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground cardamom (optional)

Combine all ingredients for desired mix and blend well. Store in a small, airtight container. Feel free to experiment with amounts to get a blend that works for you.  

For this recipe:

1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cardamom

Buttermilk Substitute Recipe

Place 1/3 cup milk in a measuring cup and add 1 tsp lemon juice or vinegar.  Stir and let sit for 5 minutes and it is ready for the recipe.
