RECIPE FOR CHICKEN MARSALA

1/4 cup flour
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/2 tsp oregano
4 skinless, boneless chicken breast halves
2 TBS butter
2 TBS oil
2 cups mushrooms, sliced
1 small onion, roughly chopped
2 garlic cloves, minced



SAUCE
1-1/2 cup Marsala wine
1/2 cup heavy whipping cream

1/2 cup chicken broth
1 TBS cornstarch
1/4 cup water

Pound out the chicken breasts until flattened. Mix the flour, salt, pepper and oregano together and place in a resealable bag. Place the chicken breasts in the bag and shake to coat evenly.

On medium-high, heat the butter and oil in a large skillet. Add the chicken breasts and cook until golden brown and no longer pink in the center; remove from pan and wrap in foil to stay warm.

Sauté the mushrooms in the same pan until soft and tender. Add the Marsala wine, cream and chicken broth. Cook on medium until reduced a bit and add the cornstarch and water mixture.

Whisk until thickened and place the chicken back into the skillet. Cook until heated through and serve with fettuccine pasta. A wonderful and easy chicken recipe.
