BAKED SALMON RECIPE
2 salmon fillets
Marinade
6 TBS extra virgin olive oil
2 garlic cloves, minced
1 tsp dried basil
1 tsp sea salt
1 tsp freshly ground black pepper
1 TBS fresh lemon juice
1 TBS fresh parsley, chopped
2 peeled and quartered potatoes
frozen peas
4 slices bacon, cut into pieces and fried
lemon zest
Marinade: Mix the marinade ingredients together. Place fillets in baking pan and pour the marinade over fillets. Turn to make sure both sides of the fillets are coated. Cover and place in the refrigerator for 1 hour to marinate, occasionally turning fillets.
PREHEAT oven to 375 degrees.
Note: Do NOT marinate fish over 1 hour or the fillets will turn mushy.
Place the quartered potatoes among the fillets and top with the peas, bacon and lemon zest. Cover and bake for 35 to 45 minutes or until fish flakes easily with fork. You may place the fish under the broiler until golden brown on top, if you wish.

CEDAR PLANK GRILLED SALMON RECIPE
What can make salmon taste even better than it does? This fresh salmon recipe includes grilling it on a cedar plank. This gives the fish a sweet smokey flavor and you will be preparing it more this way after trying it. This is a healthy fish recipe to keep and share if you wish.
First we are going to soak the planks for several hours in water. Make sure the plank is sold for grilling and not treated. Soaking it will steam the fish and keep it from burning (and that’s how we like it).
2 salmon fillets (if grilling more just double the marinade)
Best fish to use for plank grilling? Try wild sockeye salmon, you won’t be disappointed.
Best Salmon Marinade
3 TBS brown sugar, firmly packed
2 TBS soy sauce
1/2 cup dry white wine
1/3 cup dry sherry
olive oil
fresh dill, for garnish (optional)
sliced lemons, for garnish (optional)
Mix first four ingredients together. Pour 1/4 of the marinade on the bottom of a glass dish and place the fish on marinade. Pour the remaining marinade over the top of the fillets. Make sure all parts of the fillets are covered with marinade. Let sit for 15 minutes. Turn the fillets over and repeat.
Heat the grill to medium high heat. If you are using charcoal, just place briquettes to one side of the grill to cook using indirect heat.
Five minutes before grilling place the soaked planks on the grill. After 5 minutes, carefully brush olive oil over all the planks.
Place fillets skin side down on grill and top with sliced lemons and cover with lid. Cook until it reaches an internal temperature of 140 degrees. The next fresh salmon recipe is a family favorite.

A winning fresh salmon recipe that creates a caramelized salmon sandwich that also includes sweet, thick homemade teriyaki sauce that is optional.
GRILLED SALMON SANDWICH
4 rolls, split and buttered
4 (6 oz) salmon fillets
vegetable or olive oil to rub fillets
arugula leaves
8 thick bacon slices, cooked until crisp
Teriyaki Sauce
1/4 cup homemade soy sauce
1 cup water
1/2 tsp ground ginger
1/4 tsp homemade garlic powder
5 TBS packed homemade brown sugar
2 TBS honey
2 TBS cornstarch
1/4 cup water
Mix all but the cornstarch and 1/4 cup of water in a sauce pan and begin to cook. Mix cornstarch and cold water in a cup and stir to dissolve. Add to the sauce pan mixture.
Heat until sauce thickens. If it gets too thick, just add a little water to thin it out.
Options:
To spice it up, you may add 1 tsp of horseradish and 1 tsp of Dijon mustard (or to taste) to the sauce if you wish.
Directions
Rub the salmon with oil and season with salt and pepper. Grill the salmon over moderate heat, skinned side down, until lightly browned; approximately 3 minutes. Turn and grill for 3 minutes longer, until the salmon is almost cooked through.
Grill buttered rolls until golden brown and set aside.
Turn the salmon again and spread each fillet with at least 1 tablespoon of the teriyaki glaze. Turn and grill until glazed, about 30 seconds. Serve the remaining glaze on the side.
Place arugula on the bottom bun, and top with 2 slices of bacon. Add the salmon fillet and the top bun.

A family treat, these spicy salmon patties are delicious. I really love salmon and it’s so versatile, just like this fish cake recipe.
Of course you make them as hot as you want. This fresh salmon recipe creates a really moist and a wonderful treat for everyone.
You may add a little “healthy” to these and the kids won’t know (you may want to leave out the jalapenos). Meal suggestions are at the bottom of the page. Enjoy.
SPICY SALMON PATTIES
1-1/2 pounds Yukon gold potatoes, peeled and diced
5 ounces baby spinach (secret ingredient)
1/2 cup mayonnaise
1 jalapeno, seeded and chopped or sliced
3 TBS chopped dill (and more for garnish, optional)
1-1/2 lbs skinless salmon fillet, cut into 1/2 inch pieces
1/4 cup heavy cream, plus 2 tablespoons
1/4 cup chopped green onion
vegetable oil for frying
Directions
In a sauce pan, cover the potatoes with water and bring to a boil. Lower heat and simmer until tender. Drain and let cool. Transfer to a large bowl.
Heat 2 tablespoons of water in a large skillet. Add the spinach in batches and cook until wilted. Drain, squeeze dry and coarsely chop.
In a small bowl, mix the mayo, jalapeno and chopped dill together. Taste and season with salt, chill until ready to use.
Put the salmon in a food processor and pulse a few times until chopped. Pulse in the heavy cream until incorporated. Add the chopped salmon to the potatoes. Stir in the spinach and minced onion and season with salt. Form into patties.
In a large skillet, heat 1/8 inch of oil. Add half of the patties and fry over high heat until lightly browned, about 1 minute. Reduce the heat and cook until well browned; approximately 2 minutes. Turn and cook for 3 minutes, until browned.
Repeat with the remaining patties; add more oil to the skillet if needed. Garnish the patties with dill sprigs and serve with the sauce.
You will be grabbing this fish cake recipe often. This is really good with homemade tartar sauce.

This fresh salmon recipe is one of my favorite appetizers. It is requested often and a hit with everyone.
SALMON CHEESE BALL RECIPE
1/2 lb salmon (7-8 oz), cooked and flaked
1 brick (8 oz) softened cream cheese
3 TBS finely chopped green onion tops
2 tsp grated onion
1 TBS fresh lemon juice
2 tsp prepared horseradish
1/2 tsp Liquid Smoke (if salmon is not smoked)
1/4 tsp kosher salt
1/4 tsp hot sauce (or to taste)
1/4 tsp Worcestershire sauce
1/2 cup chopped walnuts, pine nuts (or your favorite for garnish)
1/4 cup chopped parsley (optional)
In a bowl, mix all of the ingredients together except the fresh parsley (if using) and chopped walnuts. Form into a ball and wrap in plastic. Chill for at least 3 to 4 hours.
When ready to serve, mix the parsley and walnuts together on a paper plate and roll the ball in it. Serve with crackers.
