Make Your Own Personal Egg Muffins
6 large eggs
1/4 tsp garlic powder
1/2 tsp onion powder
2 TBS minced or grated onion
PREHEAT oven to 350 degrees. Line muffin tins with liners or spray with oil. If you use liners they are perfect to take with you; hence walking omelets.
Loaded Omelet Cups
Toppings (possibilities are endless):
cooked bacon, crumbled
fresh spinach, cut into pieces
sliced sauteed mushrooms
cherry tomatoes, halved and roasted for a few minutes
green onion, chopped for garnish
Fill the muffin cup half full of the omelet mixture. Add toppings and bake for 20 minutes.
