Best Strawberry Pound Cake Recipe

If strawberries aren't in season, use frozen strawberries.

I only use King Arthur Cake Flour for pound cakes - No need to sift and gives the cake a fine crumb.

Strawberry Pound Cake Recipe

2 cups fresh strawberries, finely chopped
1 cup butter, at room temperature
2 cups white sugar (plus 3 TBS to macerate strawberries)
4 eggs
3 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2/3 cup buttermilk
1 tsp vanilla extract
1/4 tsp almond or strawberry extract

Strawberry Glaze
1 cup white sugar
1 cup chopped strawberries
1/2 tsp vanilla extract
1/4 tsp almond or strawberry extract

PREHEAT oven to 325 degrees. Grease and flour a bundt pan.

Place chopped strawberries in a bowl and add 2 TBS granulated sugar; mix well.  Let macerate for 45 minutes or until you have 1/4 cup strawberry juice; set aside.

Now we are going to do the same thing for the strawberries used in the glaze.  Place the chopped strawberries for the glaze in a bowl and cover with 1 TBS of sugar, stir well and set aside.

In a mixing bowl, beat the butter and 2 cups of sugar until light and fluffy; approximately 3 to 5 minutes. Add eggs, one at a time, beating well after each addition. Combine the dry ingredients and add to the creamed mixture alternately with the buttermilk, vanilla and strawberry extracts; mix well.  Fold in the 2-1/4 cups macerated strawberries and juice.

Pour into the prepared cake pan and bake for 65-75 minutes, or when a knife inserted in the center comes out clean. Let cool in pan for 10 minutes, remove and invert onto a wire rack. Poke holes on the top of the cake with a fork.

Glaze:  In a small saucepan, combine 1 cup sugar and reserved 1 cup macerated strawberries and juice.  Bring to a boil; cook and stir for 1 minute. Remove from the heat; stir in extracts. Drizzle some of the sauce over the warm cake. Serve cake with remaining sauce and homemade whipped cream.


You may also cut the cake into thirds horizontally and fill it with the whipped cream (add some cut up strawberries).  You may garnish the top with fresh strawberries also.
