Easy Homemade Strawberry Pound Cake Recipe
Cake 1 cup fresh strawberries, chopped
1-1/2 cups all purpose flour 2 tsp baking powder
1/2 tsp salt
1 cup granulated white sugar 3 eggs, slightly beaten 1 cup plain Greek yogurt
1 tsp vanilla extract 1/2 cup vegetable oil
1/2 tsp almond or strawberry extract (optional)
Strawberry Glaze 2 cups confectioners sugar
1/2 cup smashed strawberries with juice 2 TBS melted butter
PREHEAT oven to 350 degrees. Grease a bundt or loaf pan; set aside.
In a mixing bowl add the yogurt, sugar, eggs, extracts and oil. mix well. Whisk the flour, baking powder and salt together in a bowl and stir into the creamed
mixture until just incorporated. Do not over-mix. Carefully fold in the strawberries.
Pour into the prepared cake pan and bake for 45-55 minutes, or when a knife
inserted in the center comes out clean. Let cool in pan. Poke holes on the top of
the cake with a fork.
Glaze: Combine confectioners sugar, melted butter and whisk together, then add the smashed strawberries/juice. Mix well and pour over the cake.
