Date Nut Bread Recipe

2-1/4 cups flour
1 tsp vanilla
1-1/2 cups white sugar
1-1/2 cups boiling water
1/4 tsp salt
2 tsp baking soda
1 egg, beaten
1 cup chopped dates
1 cup nuts
1/4 tsp baking powder
1 TBS melted shortening (or butter)
Pour boiling water over dates and let stand 10 minutes.  Add sugar gradually to beaten egg.  Sift together dry ingredients and add nuts.

Add date mixture alternately with dry ingredients to the egg mixture.  Stir in melted shortening and vanilla.  Pour into greased 10x5x5 inch loaf pan.

Bake at 350 degrees for 1 hour and 15 minutes or until toothpick inserted in the center comes out clean.  Smaller pans may be used by altering length of baking time.

GLAZE (optional)

1/4 cup homemade unsalted butter
2 cups homemade powdered sugar
2 TBS milk
1/2 tsp homemade pure vanilla extract

Melt butter in small saucepan and add to the powdered sugar. Add the milk and vanilla extract. Beat until smooth and creamy, adding more milk until smooth and creamy.

1 lb dates equals 2-2/3 cups chopped, pitted dates.  If substituting dates with raisins, figs or prunes and the amount is only 1/2 cup, the fruit can be omitted from the recipe.

2 cups pitted dates, cut into small pieces
2 TBS solid vegetable shortening
2/3 cup packed light brown sugar
1/2 cup honey
3/4 tsp vanilla extract
3/4 tsp grated orange peel
1/4 cup fresh orange juice
3/4 cup hot water
2 cups flour
1 tsp baking soda
1 tsp salt
1 egg, beaten
3/4 cup pecans, chopped
1/4 cup walnuts, chopped

In a medium bowl, combine dates, shortening, brown sugar, honey, vanilla, orange peel, orange juice and hot water.  Let stand 15 minutes.

PREHEAT oven to 325 degrees and grease a 9x5 inch loaf pan.

In a small bowl, stir flour, baking soda and salt together.  Add egg to date mixture and mix well.  Stir in flour, soda and salt and stir just enough to moisten dry ingredients.  Fold in pecans and walnuts.

Turn batter into prepared pan.  Bake about 1 hour or until a wooden toothpick inserted in the center of the loaf comes out clean.  Cool in the pan on a wire rack 10 minutes, then turn out on the rack to cool completely.

Wrap in foil or plastic wrap and store in the refrigerator or other cool place overnight or longer before slicing.  Will keep for 1 week in refrigerator.
