Homemade Manicotti
MANICOTTI PASTA RECIPE
1-1/2 lbs basic pasta dough your favorite filling
2 cups favorite homemade tomato sauce
grated Romano cheese
shredded mozzarella cheese
Divide the dough into 6 equal parts and roll out on a lightly floured surface into squares about 9×10 inches. Cut square in half, and cut each half into 3 equal strips.
PREHEAT oven to 375 degrees.
Cook pasta in a pot of boiling salt water for 3 minutes. Remove to colander and run under cold water. Drain on a clean towel.
Place 2 tablespoons of filling on each strip and roll up from the long side. Put seam down in a baking pan. Add 1/4 inch of hot water to the pan and cover the manicotti with 2 cups of your favorite tomato sauce. Sprinkle with Romano cheese.
Cover firmly with foil and bake for 1 hour. Remove the foil and sprinkle with mozzarella cheese. Bake, uncovered, for 10 minutes or more until the cheese is melted. You may top this with additional sauce is you want.
