Homemade Recipe for Cinnamon Rolls
ROLLS:
1 pkg dry yeast
1 cup milk, warmed to 110 degrees
2 eggs, room temperature
1/3 cup homemade unsalted butter, melted
4 cups all purpose flour
1 tsp salt
1/2 cup white sugar
FILLING:
1 cup homemade brown sugar, packed
2-1/2 TBS cinnamon
1/3 cup homemade unsalted butter
FROSTING:
1 (8oz) pkg cream cheese, softened
8 TBS homemade unsalted butter, softened
1-1/2 cups homemade powdered sugar
1 tsp homemade pure vanilla extract
1/8 tsp salt
2 TBS strongly brewed coffee (optional)
Rolls:
Dissolve the yeast in the warm milk in a large bowl. Mix the sugar, butter, salt and eggs. Add the flour and mix well.
Flour your hands and knead the dough into a large ball. Place in a bowl, cover and let rise for 1 hour; or until the dough has doubled in size.
Roll the dough flat on a lightly floured surface until it’s approximately 21 inches long and 16 inches wide; 1/4 inch thick.
PREHEAT oven to 350 degrees and lightly grease a 9×13 baking pan.
Filling:
Combine the brown sugar and cinnamon in a bowl. Spread the butter evenly over the surface of the dough and sprinkle with the cinnamon sugar mixture.
Working from the top (21″ side), roll the dough down tightly to the bottom edge. Cut log into 1-3/4 inch slices and place into the prepared baking pan. Cover with a towel and let the rolls rise again, until nearly doubled in size. Bake for 13-18 minutes or until light brown.
Icing:
Beat butter and cream cheese together until light and fluffy. Slowly add all of the powdered sugar and beat for 5 minutes. Add vanilla, salt and coffee (if using); beat 1 minute.
