Try a bacon and egg taco with an optional southwestern flair. Fluffy scrambled eggs, melted cheddar cheese, crispy bacon, sour cream and taco seasoning make it a simple, delicious anytime meal.
Bacon and Egg Taco Recipe
1 TBS milk
1 TBS chopped onion
2 TBS chopped bell pepper (red or green)
cooked bacon strips
Heat a small pan on medium and add some oil. Fry each side of the corn tortillas until it starts to turn golden brown (photo below). Place on paper towels.
Scramble the eggs with the milk, chopped onion and bell pepper. When done top with the shredded cheese, cover and remove from the heat.
Take a golden brown taco and add some sour cream to one side and sprinkle with a little taco seasoning. Add 1/4 of the cheesy scrambled eggs and season with salt and pepper. Top with a strip of cooked bacon.
- Makes 4 breakfast tacos.
- Serve with hot sauce and salsa if you wish.
- You may substitute sausage for bacon
