Homemade Pesto Sauce
EASY PESTO FROM SCRATCH
3 cups fresh basil leaves
1/2 cup olive oil
3/4 cup Romano cheese, grated
1/2 cup pine nuts
1 tsp salt
1/2 tsp pepper
Place ingredients in a food processor or blender and puree to a smooth paste. You may also use a mortar and pestle with great results. If the pesto seems too dry, just add more olive oil. Makes 2 cups.
Pesto is usually served with homemade fettuccine, but it is also delicious with any homemade pasta. You may also top bruschetta with fresh pesto – it makes a great appetizer.
HOMEMADE PESTO RECIPE FROM SCRATCH
1 large bunch parsley, chopped
1 cup fresh basil leaves
2 TBS butter, melted
1/2 cup olive oil
1/2 cup pine nuts
4 garlic cloves
1/2 cup Romano cheese, grated
1 tsp salt
1/4 tsp oregano
1/4 tsp pepper
Place in a blender, food processor or use a mortar and pestle and process until it becomes a smooth paste. Makes 3 cups. Topped with sliced radish, black olives or whatever you want.
