The first of my venison stew recipes is divine. A wonderful hearty stew that warms the body on a cold day.

3 TBS canola oil
2 lb venison stew meat, cubed
1/4 cup flour
1 tsp homemade garlic powder
1 tsp homemade onion powder
1/2 cup red wine


4 cups homemade beef broth
1 TBS Better Than Bouillon (or to taste)
1 tsp rosemary
1 tsp parsley
salt and black pepper to taste
3 large red or golden potatoes, cubed
4 carrots, cut into 1 inch pieces
4 celery stalks, cut into 1 inch pieces
1 large onion, chopped

Place canola oil in a large cast iron skillet or heavy pan. Dredge the stew meat in the flour and place in the hot oil to sear. Season the pieces with the garlic and onion powder. Don’t worry if you think you are over seasoning them, this is a crucial step to meld flavors and make it taste wonderful.

Once the venison is seared on all sides, add the wine and de-glaze (scrape) the bottom of the pan to get all of the tasty pieces loose on the bottom. Add the broth, better than bouillon, rosemary, parsley and salt/pepper to taste. Bring to a boil, reduce heat and add the vegetables. Simmer until vegetables are done; approximately 60 minutes.

Serve with homemade buttermilk biscuits or homemade corn bread.

RECIPE FOR VENISON STEW

2 lbs beef stew meat, cut into 1″ cubes
1/3 cup flour
1/2 tsp seasoned salt
1 tsp homemade garlic powder
1 tsp homemade onion powder
2 TBS canola oil

1 TBS homemade worcestershire sauce
1-1/2 cups beef broth
1/2 cup red wine

3 potatoes, diced
4 carrots, sliced
2 celery stalks, diced
1 onion, chopped
2 TBS beef stew seasoning, recipe below

In a heavy skillet, heat the canola oil over medium heat. Place the flour, seasoned salt, garlic and onion powder in a resealable bag and shake. Add the cubes of meat and shake well to cover evenly. Fry the pieces in a skillet until browned on all sides. Add onion to the cubes of meat and saute until tender. Pour into a slow cooker.

Mix the worcestershire sauce, beef broth and wine together and pour into the bottom of the skillet and scrape to deglaze the bits from the bottom. Pour all of this into the crock pot over the venison and onions; mix well. Add potatoes, celery, carrots and onion. Sprinkle the stew seasoning over all. Place on high for 4 to 5 hours or on low for 8 to 10 hours.

Serve with crusty homemade bread. Amazing.



VENISON or BEEF STEW SEASONING

Place in a resealable bag and shake to mix. Add two to three tablespoons per 2 pounds of meat. Makes approximately 1-1/2 cups.

2 cups flour
4 TBS salt
4 TBS black pepper
4 TBS homemade garlic powder
4 TBS homemade onion powder
2 TBS celery seeds
2 TBS basil
1 TBS paprika
4 tsp oregano
2 tsp rosemary
1 tsp cayenne pepper, or to taste (optional)

Mix well.
