This is an exceptional homemade rhubarb cake recipe from scratch.
The cake is so moist and has a sweet and tart flavor. Offering many rhubarb and strawberry desserts below.
RHUBARB CAKE FROM SCRATCH
2-1/2 cups diced rhubarb
1/2 cup white sugar
2 cups flour
1 tsp cinnamon
1/4 tsp salt
1/2 cup vegetable oil
1-1/2 cups white sugar
1 tsp
homemade pure vanilla extract
1 egg
1 tsp baking soda
1 cup
homemade buttermilk
PREHEAT oven to 350 degrees and grease a 9x13 inch pan.
Combine rhubarb and 1/2 cup sugar together in a bowl and set aside for at least 20 minutes.
Meanwhile, mix together flour, cinnamon and salt. Stir in mixture of
oil, additional sugar, vanilla and egg; mix well. Add baking soda to
the cup of buttermilk and stir into the cake batter. Fold in the
sugared rhubarb.
Pour into the prepared baking pan and sprinkle with topping (recipe
below). Bake for 50 to 60 minutes or until a toothpick comes out clean.

1 tsp cinnamon
chopped nuts, optional
