Cherry Coffee Cake Recipe

Cherry Cream Cheese Coffee Cake Recipe

Cake

2-1/4 cups all purpose flour
3/4 cup granulated white sugar
3/4 cup cold butter, cubed
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 large egg, slightly beaten
3/4 cup sour cream
1 tsp almond extract

Filling

one (8oz) brick cream cheese
1/4 cup powdered sugar
1 large egg, slightly beaten
one can (21 oz) cherry pie filling
1/2 cup slivered almonds

PREHEAT oven to 350 degrees. 

Cake Instructions

In a bowl, combine the flour with the sugar and cut in the butter until crumbly.  Reserve 3/4 cup of this crumbly mixture and set aside.

To the remaining mixture add the baking powder, baking soda and salt.  Stir in the egg, sour cream and almond extract until blended.  Press into the bottom and one inch up the side of a ungreased 9 in springform pan with a removable bottom.

Filling Instructions

In a mixing bowl beat the cream cheese and powdered sugar together for one minute.  Add the egg and beat just until combined.  Spread this over the crust and then carefully spoon cherry pie filling over it evenly.  Sprinkle with almonds and reserved crumbly topping. 

Bake for 50-60 minutes or until set in the center and cool on a wire rack.  Run a knife around the edges to loosen and remove sides of the pan.  Store in the refrigerator.
