Homemade Orange Cake

OLD FASHIONED ORANGE SLICE CANDY CAKE RECIPE

1 cup homemade unsalted butter
2 cups white sugar
4 eggs
1/2 cup homemade buttermilk
1 tsp baking soda
3-1/2 cups flour
1/4 lb dates, pitted and chopped
1 lb orange slices candy, chopped
1 tsp homemade pure vanilla extract
2 TBS grated orange peel
1/2 cup pecans, chopped (optional)
1 cup flaked coconut

Glaze
1 cup fresh orange juice
2 cups homemade powdered sugar

PREHEAT oven to 325 degrees. Grease and flour a large loaf pan; set aside.

Cream the butter and the sugar together until light and fluffy. Add the eggs, one at a time beating after each addition. Dissolve the baking soda in the buttermilk and add it to the egg mixture, beating well.

In a large bowl mix the flour, dates, candy, nuts and coconut. Mix to coat. Add the flour mixture to the creamed mixture and combine well. Dough will be very stiff and may require mixing with your hands. Place dough into the prepared pan.

Bake for 1-1/2 to 2 hours. Cake is done when a toothpick inserted in the center comes out clean. Mix the orange juice and confectioners’ sugar together and heat in a small saucepan. Make a few holes in the cake with a butter knife. Pour the glaze over the hot cake and let cake stand in pan overnight before serving.
