Homemade Coconut Pecan Frosting Recipe
This frosting is also “to die for” on a dark chocolate cake. For a variation use may use walnuts instead of pecans. Delicious on a Homemade Banana Cake too.
German Chocolate Cake Frosting
1 cup evaporated milk
1 TBS cornstarch
1 cup white sugar
3 egg yolks
1/2 cup butter
1 tsp pure vanilla extract
1/2 cup pecans, chopped (or to taste) – toasted
1/2 cup flaked sweetened coconut (or to taste), lightly roasted
Whisk the evaporated milk and cornstarch together in a large saucepan. Now add the sugar, egg yolks, butter and vanilla. Cook over low heat, stirring constantly, until thick. Remove from heat and stir in pecans and coconut. Spread on cake while still warm.
NOTE
Some folks like a lot more pecans and coconut than others. That’s why I leave it up to you and put “or to taste” following the ingredients.
To toast the pecans and coconut, just place on a piece of foil and place under the broiler (on medium or low) until it turns a light golden brown. Watch it closely. Enjoy.
