These bean salad recipes are perfect for grilling and picnics. I really enjoy them both, the Southwest Bean Salad is so fresh – love it with chips.
The three bean salad would be fantastic to make in the summer when you can use beans out of your garden.
What’s great about these recipes is that you do not have to turn the oven on. Wonderful in the summer.

Bean Salad Recipes
This recipe can be changed according to your families taste. If you have fresh beans, by all means, use them. It will be outstanding.
Three Bean Salad Recipe
1 can green beans, rinsed
1 can yellow wax beans, rinsed
1 can kidney beans, rinsed
Dressing
1/2 cup granulated sugar
1/2 cup cider vinegar
1/2 cup olive oil
1 tsp kosher salt
1 tsp freshly ground black pepper
1 tsp paprika (optional)
Mix the salad ingredients together in a large bowl. In a small bowl, make your dressing and pour over salad. Lightly toss and let sit in the refrigerator overnight, covered. Drain partly and serve chilled.
I love this on my tossed salad. Try it.

This recipe will rock your world. Just hand me some tortilla chips and I’m ready to go. You may add your favorite beans to this salad to make it your own. Great with Mexican food, grilling out and all by itself. Fresh is best and this is it.
Southwest Bean Salad
1 can black beans
1 can dark kidney beans
1 tomato, seeded and chopped
1 avocado, chopped
1 frozen bag sweet corn
1 red onion, chopped
small cucumber, seeded and chopped (optional)
Dressing
1/2 cup olive oil
1/2 cup red wine vinegar
1 TBS fresh lemon juice
2 TBS fresh lime juice
2 TBS granulated sugar
1 TBS kosher salt
1/4 cup fresh cilantro, chopped
1 tsp ground cumin
1 tsp freshly ground black pepper
hot sauce, to garnish
Mix the beans and vegetables together in a large bowl. Mix the dressing ingredients together and pour over salad. Chill for a few hours before serving and serve with hot sauce and tortilla chips. It’s really good with burritos and over Mexican rice.
