Easy Breakfast Casserole Recipes
It’s so easy to prepare a breakfast casserole the night before and pop it in the oven in the morning so it’s ready when everyone wakes up.
Most of us have memories of Mom making a special breakfast casserole for holidays like Christmas or New Year’s, but with these breakfast casseroles, you can create great family memories any day of the year.

BEST BREAKFAST CASSEROLE
1/2 pound pork sausage
1/2 pound cooked ham, cubed
small onion, chopped
2-1/2 cup shredded potatoes (Simply Potatoes work too)
1 cup shredded cheddar cheese
1/4 cup chopped green onion
1-3/4 cups milk
1 cup Bisquick
4 eggs
salt and pepper to taste
Topping
1 cup shredded cheddar cheese
PREHEAT oven to 400 degrees.
Brown sausage and onion. Drain and mix with all ingredients (except the topping). Spray a 9×13 inch casserole dish with oil and place mixture evenly in the prepared dish. Top with 1 cup cheddar cheese and bake for 40 minutes.
SAUSAGE CHEDDAR BREAKFAST CASSEROLE
1 lb Jimmy Dean Maple Flavored Sausage or bacon
1 tsp mustard powder
1/2 tsp salt
1/4 tsp freshly ground black pepper
10 eggs
1-1/2 cups half-and-half
3 TBS green onion, chopped
1 box Marie Callendar’s Cheese and Garlic Croutons
1-1/2 cups Monterrey Jack Cheese, shredded
1-1/2 cups mild cheddar cheese, shredded
Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9×13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.
PREHEAT oven to 350 degrees.
Cover, and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees Bake for an additional 30 minutes, or until set.
BACON BREAKFAST CASSEROLE RECIPE
1 lb bacon, chopped
1 sweet onion, chopped
6 eggs, lightly beaten
4 cups hash browns
2-1/2 cups cheddar cheese, shredded
1 cup small curd cottage cheese
3/4 cups Swiss cheese, shredded
PREHEAT oven to 350 degrees and grease a 9×13 baking dish.
Fry the bacon and onion together until the bacon is starting to get crisp. Drain well. Combine the other ingredients in a large bowl and add the cooked bacon and onion. Mix well and place in the prepared baking dish.
Bake, uncovered for 40 minutes or until bubbly. Wait ten minutes before serving.
