Dandelion Greens Recipe
CLEANING:
Be certain to change the water several times when cleaning dandelion greens to get rid of dirt, grit and bugs, etc.
DANDELION GREENS AND SALT PORK RECIPE
3 lbs greens
3 inch piece salt pork, sliced
1 tsp kosher salt
butter to taste
cider vinegar to taste
salt and pepper to taste
Put 6 inches of water in a large pot. Add the sliced salt pork and greens. Sprinkle the kosher salt on top of the greens.
Bring to a boil and reduce heat – simmer for an hour. Drain well and serve with butter, vinegar and salt and pepper to taste.
WILTED DANDELION GREENS RECIPE
3 quarts greens
8 slices bacon
1 onion, chopped
2 TBS sugar
2 TBS cider vinegar
1 tsp kosher salt
1/3 tsp freshly ground black pepper
In a skillet on medium-high heat, fry the bacon until crisp. Drain on paper towels and crumble.
Add the chopped onion to the bacon grease and saute until a light golden brown.
Add the sugar, vinegar, salt and pepper to the bacon fat and bring to a boil. Add the dandelion greens and cook for 3 minutes or until they are wilted. Transfer to a dish and sprinkle with the crumbled bacon before serving.
FRESH DANDELION GREENS SALAD RECIPE
2 cups dandelion greens
2 tsp red onions, sliced thinly
2 ripe avocados – peeled, pitted and sliced
2 tomatoes, sliced
1 cucumber, peeled and sliced
2 TBS extra virgin olive oil
3 tsp fresh lemon juice
1/4 tsp dried dill
salt and pepper to taste
Tear dandelion greens in bite-sized pieces, discarding the tough parts and stems. Place in a salad bowl.
Add the onion, avocado, tomatoes and cucumber. Sprinkle with the olive oil, lemon juice and dill. Toss. Season with salt and pepper and serve.
DANDELION GREENS RECIPE WITH POTATOES
5 lbs potatoes, peeled and cubed
3 TBS butter
salt and pepper to taste
1 lb bacon, diced
1 lb dandelion greens, torn
1 medium onion, diced
1 egg, lightly beaten
1/2 cup white vinegar
1 TBS white sugar
1 TBS flour
Bring a large pot of salted water to a boil and cook potatoes until tender but firm; approximately 15 minutes. Drain, toss with butter and season with salt and pepper.
Meanwhile, place the bacon in a large skillet and fry until cooked and brown. Drain on paper towels. Add the onion to the bacon grease and saute until light brown in color.
In a small bowl, combine the egg, vinegar and sugar. Season with salt and pepper and pour into the hot bacon grease with onion in the skillet.
Add the flour and bacon and whisk together until it thickens like salad dressing; about 1 minute.
Add the greens to the skillet and toss to coat evenly with the bacon salad dressing. Pour over the warm, buttered potatoes and serve immediately.
HOMEMADE DANDELION WINE RECIPE
1 pkg dried yeast
1/4 cup warm water
2 quarts dandelion blossoms
4 quarts water
1 cup orange juice
3 TBS fresh lemon juice
3 TBS fresh lime juice
4 whole cloves
1/2 tsp ginger
3 TBS coarsely chopped orange peel
1 TBS coarsely chopped lemon peel
6 cups white sugar
Dissolve the yeast in the warm water and set aside.
Make sure you wash the dandelion blossoms well. Pour the 4 quarts of water in a large stock pot and add the dandelion blossoms. Add the remaining ingredients EXCEPT the yeast mixture.
Bring to a boil and continue boiling for 1 hour. Strain through coffee filters and cool. While it is still warm (but not hot), add the yeast mixture.
Let this stand overnight and then pour into bottles. Allow the UNCORKED bottles to sit in a dark place for 3 weeks.
Cork and store in a cool place. This makes approximately 4 quarts of wine. Another great dandelion greens recipe.
EXCELLENT DRESSING for FRESH DANDELION GREENS
7 slices of bacon
2 eggs beaten
1/2 cup white sugar
1/2 tsp kosher salt
1 cup homemade mayonnaise
1/3 cup apple cider vinegar
1-1/2 cups milk
3 TBS flour
3/4 lb dandelion greens, torn
Fry bacon in a skillet until crisp. Drain on paper towels and reserve 3 TBS of the bacon fat.
In a bowl, whisk the eggs, sugar, salt, mayonnaise, cider vinegar and milk. Set aside.
Reheat the bacon grease in the skillet and add the flour, whisk until smooth. Cook until the flour turns brown, or approximately 10 minutes. Add the liquid mixture you have in the bowl and whisk together as you are bring this to a boil.
Crumble the bacon into the skillet and add the dandelion greens. Cook until the greens are wilted. Serve.
For those of you that do not know what tempeh is, I will describe it to you for this dandelion greens recipe. Tempeh is made from cooked and slightly fermented soybeans and formed into a patty, similar to a very firm veggie burger. It is very high in protein and calcium. It is textured and tastes nutty. Enjoy this dandelion greens recipe.
GREENS, CABBAGE AND TEMPEH
6 cloves garlic, crushed (divided)
1 TBS tamari (dark sauce make with soybeans; like soy sauce)
1 TBS rice or balsamic vinegar
3 TBS olive oil, divided
1/2 tsp dried thyme
1/2 tsp oregano
1/2 tsp basil
1 pinch homemade red pepper flakes
1 pkg tempeh
1 bunch dandelion greens, coarsely chopped
1 small head red cabbage, finely chopped
We need 4 of the 6 garlic cloves crushed and mixed with the tamari, vinegar, 1 TBS of olive oil and the dried herbs to make a marinade. Cut the tempeh in 1/2 inch squares and marinate in the mixture you just made.
Add the remaining 2 TBS of olive oil to a large skillet or wok and add the remaining two crushed garlic cloves on medium heat. Take the garlic out and discard.
Now add the marinated tempeh to the skillet and cook until the edges turn crispy. Add the dandelion greens and cabbage; stir-fry until greens are nicely wilted. Serve over rice or butter noodles.
SWEET AND SOUR DANDELION GREENS RECIPE
1 lb dandelion greens, torn in half
1/2 lb bacon
1/3 plus 3 TBS white sugar
2 TBS flour
1/2 cup water
1 tsp kosher salt
1/4 tsp ground black pepper
1/4 cup cider vinegar
1 egg
2 hard boiled eggs, sliced
In a skillet fry bacon until crisp and drain on paper towels. Take 4 TBS of the bacon grease and put in a saucepan. Stir in sugar, flour, salt and pepper until smooth.
Gradually add 1/2 cup water and the cider vinegar. Cook over medium heat until mixture comes to a boil and thickens.
In a small bowl, beat the egg with a whisk or fork. Gradually add a little of the hot water mixture. Mix well and return all back to the saucepan. Bring to a boil and stir constantly for 4 minutes.
Crumble bacon and add the hard boiled eggs and dandelion greens to the hot mixture. Stir until greens are wilted and serve immediately.
