Easy Chipped Beef Recipe
Homemade Chipped Beef
Sauce Base
2 cups milk (no 1% or skim milk)*
5 TBS butter
6 TBS all purpose flour
1/2 tsp salt (omit if you used salted butter)
freshly ground black pepper to taste
In a saucepan, melt the butter on low heat. Whisk the flour into the melted butter and cook for two minutes, continuously whisking, to get rid of the floury taste you may encounter.
Slowly whisk in the milk, salt and pepper. Continue whisking until mixture is smooth and thickened.
2 oz bag Buddig dried beef, sliced
When the sauce is thick, just add the sliced beef and cook for a minute to heat. Serve on buttered toast, mashed potatoes or biscuits.
*If you want the sauce richer, just use half-and-half instead of milk.
