What is silky, rich with a delightful garlic flavor? My garlic sauce recipe will create a delicious meal like homemade garlic cream sauce over pasta.
It is so versatile I use it over grilled chicken or steak and roast potatoes as seen below.
Garlic Sauce Recipe
3 garlic cloves, grated
2 TBS freshly chopped chives
2 tsp unsalted butter
1/2 cup chicken stock
1 cup heavy whipping cream
salt and pepper to taste
Chop the garlic cloves and chives and set aside. Add butter to the top pan of a double boiler (or a bowl over a pan of boiling water) and when melted add the chopped garlic and chives. Sauté for two minutes.
Add the wine, heavy cream and cook on low simmer for approximately 12 minutes. Add salt and pepper to taste and let sit for a few minutes to thicken. If you are looking for a thicker sauce, just cook it for 20 minutes instead of 12 minutes.
After 20 minutes remove from heat and again let sit a few minutes to thicken up. Taste it to be sure it has enough salt in it so the flavor is not bland.
NOTE: This mixture will burn easily that is why I suggest a double boiler or a bowl over the pan of boiling water. It must cook on a low simmer stirring often.

I also love it on roast potatoes sprinkled with parsley and use it often with chicken over pasta too.

White Garlic Sauce for Pizza
This may also use it for a white garlic pizza sauce, just be certain you cook it until it is thick – it will not work well if it isn’t. I make sure the crust isn’t flat so the sauce can bubble over when cooking.
2 TBS unsalted butter
1 TBS olive oil
3 TBS grated onion
2 garlic cloves, grated
3 TBS all purpose flour
1-1/4 cups whole or 2% milk
1/2 cup freshly grated Parmesan cheese
1 TBS dried basil (or 2 TBS fresh basil, minced)
1/4 tsp salt (taste it may need more)
1/4 tsp freshly grated black pepper
In a smaller saucepan, heat the butter and olive oil on medium heat and then add the grated onion and garlic – stirring for minute.
Add the flour and whisk constantly to make a roux until it is light brown in color; approximately two minutes.
Whisk in the milk, Parmesan cheese, basil, salt and pepper and continue cooking until mixture is creamy and has thickened, approximately five minutes. Remove from heat and taste to make sure you have enough salt in it. Remove from heat.
Brush your favorite pizza dough with oil, spread sauce, add your favorite toppings and bake according to dough instructions. This sauce is enough for two medium pizzas. The sauce freezes well, all you have to do is thaw it at room temperature.
