This old fashioned egg salad recipe is lovely, and especially good made with my homemade bread – toast it if you like.
Add crunchy lettuce, and you’ll have a wonderful quick lunch, that doesn’t lack in flavor. My secret? Homemade mayonnaise.
Easy Egg Salad Recipe
BEST HOMEMADE EGG SALAD RECIPE
8 large eggs, hard boiled
1/2 tsp homemade garlic powder
1/2 tsp homemade onion powder
4 TBS homemade mayonnaise, (or more)
1/2 tsp salt (or more to taste)
freshly ground pepper to taste
1/2 cup finely chopped onions (more if you love onions), optional
1/2 cup finely chopped celery
1-1/2 TBS canola oil
1 TBS butter
4 strips of bacon (optional)
Place the butter and canola oil in a skillet and add the bacon. cook until crispy. Drain and crumble; set aside. Saute the onion and celery in the bacon grease until tender.
Mash the hard-boiled eggs, but don’t mash them too fine – you want the chunkiness. Add the sauteed onion and celery. Toss in the bacon. Mix everything together and taste it. If it is too bland, add more salt.
Serve in a bowl if using as a brunch spread. If serving as a lunch salad, surround a generous scoop with lettuce, tomato wedges, and sliced cucumbers.
You may also serve it with crackers or make a wonderful sandwich.
