3 lbs pork shoulder loin (or country-style ribs)
1 tsp freshly ground black pepper
2 TBS cumin
3 TBS homemade chili powder
1 TBS homemade cayenne pepper
1 tsp homemade garlic powder
1 tsp homemade onion powder
4 whole garlic cloves
2 bay leaves
2 cups oil (canola, olive oil)
8 to 12 homemade corn tortillas

Put meat in a 9×13 inch dish. Mix the dry ingredients with the oil and pour over the meat. Marinate overnight or for a minimum of 6 hours, covered in the refrigerator.
PREHEAT oven to 350 degrees and bake uncovered for 45 to 60 minutes. When cooled, chop meat into cubes or pull into strips. Serve on corn tortillas and top with garnishes listed. Squeeze with fresh lime before serving.
