This sweet and sour cabbage soup is wonderful comfort food.
Beef broth and gravy with chunks of beef and tomatoes. Wonderful with homemade bread.
HOMEMADE CABBAGE SOUP
20 oz beef gravy
4 cups homemade beef broth
2 cups water
1 lb stewing beef, cut into bite-sized pieces
1/4 cup onion, minced
1/4 cup celery, grated
3 cups stewed tomatoes, cut up
1 TBS brown sugar
1 TBS vinegar
2 cups cabbage, chopped
2 cups carrots, sliced
In a large dutch oven or stock pot, combine ingredients and bring to a boil. Turn down and simmer for two hours, or until cabbage and beef are tender.
NOTE
This soup freezes well.
