Easy Baked Chicken Recipes

It’s a good idea to have some easy baked chicken recipes on hand.  Especially when you don’t have time to get ingredients or don’t want to spend the afternoon cooking.

This spicy roast chicken is something you have to have in your recipe rotation. So juicy because it is slow roasted and then drizzled with honey; a lip-smacking sweet and spicy meal. #misshomemade

My first easy baked chicken recipe includes this dry rub. The chicken needs to chill in the refrigerator for at least 24 hours before roasting.  When you taste this juicy masterpiece, it will be worth the wait.

HONEY SPICED ROAST CHICKEN RECIPE

whole chicken or large breast halves, thighs, legs

RUB:

2 tsp kosher salt
2 tsp homemade seasoned salt
1 tsp paprika
1 tsp homemade onion powder
1 tsp homemade garlic powder
1/2 tsp freshly ground black pepper
1/4 – 1/2 tsp cayenne pepper (or to taste)
1/2 tsp rosemary
1/2 tsp thyme

Mix all of the rub ingredients together in a small bowl. Remove the giblets and discard. Wash the chickens thoroughly and pat dry with paper towels. Rub each chicken inside and out and place in a resealable bag; wrapping again in foil.

Chill in the refrigerate to marinate for at least 24 hours. DO NOT skip this step.

The next day, PREHEAT oven to 250 degrees and lightly spray a roasting pan with vegetable oil.

Place the chicken in a roasting pan and cook uncovered for 5 hours, or until a meat thermometer reads 170 degrees in the thickest part of the chicken. Drizzle the chickens with the pan drippings and wrap in foil. Let sit for at least 10 minutes before carving. Drizzle pieces with honey before serving.

To make chicken gravy, add a can of chicken broth mixed with 1 tablespoon cornstarch to the pan juices, and let boil till thicken.

In a hurry? Use 5 or 6 chicken breasts or thighs with bone. Skip the onion and marinating. Instead, toss seasonings & chicken in a large oven roasting bag, shake till chicken are all evenly coated. Bake in 350 degree oven for 1-1/2 hours.

Covered with thick delicious homemade barbecue sauce (or BBQ dry rub) and roast to perfection, this chicken is an outstanding and juicy addition to your meal rotation. #misshomemade

Easy Baked Chicken Recipes

If you like BBQ chicken on the grill and want that flavor without grilling outside during the winter months, you need to make my Roast BBQ Chicken.  Make using a BBQ dry rub or BBQ sauce it is your choice. 

WHOLE BBQ CHICKEN USING DRY RUB

3 TBS sweet paprika
1 tsp smoked paprika
2 TBS dark brown sugar
1 tsp chili powder
3/4 tsp freshly ground black pepper
1 tsp onion powder
1/2 tsp salt
1/4 tsp cayenne pepper (or to taste)

Mix spices together in a sandwich-size plastic bag and shake to mix.  Rub chicken down with melted butter or olive oil and sprinkle heavily with the dry rub.  You may keep this dry rubbed chicken covered (or in a large plastic bag) in the refrigerator overnight for the flavors to meld. 

Remove from refrigerator and roast chicken at 375 degrees for 60 minutes or until the juices run clear (170 degrees).

EASY ROAST BBQ CHICKEN USING SAUCE

Sauce
1 cup homemade ketchup
1/4 cup homemade brown sugar, packed
2 TBS fresh orange juice
1/4 tsp liquid smoke
1/2 tsp dry mustard
1/4 tsp cayenne pepper
1 tsp homemade worcestershire sauce

PREHEAT oven to 375 degrees.

Mix sauce ingredients together and reserve 1/3 of the sauce for later. Brush chicken generously with barbecue sauce and place in 375 degree oven.

Roast for 45 minutes. Remove chicken and top with the remaining barbecue sauce. Bake for another 15 minutes or until juices run clear. Recipe adapted from PaulaDeen.com
