These homemade white sauce recipes sure come in handy when you want to make something quick.
Things like homemade cheese sauce, chipped beef on toast, mushroom sauce and sausage gravy. Béchamel sauce is another name for white sauce.
BASIC WHITE SAUCE RECIPE
2 TBS butter
2 TBS flour
1/4 tsp salt
1 cup milk
In a small saucepan, melt the butter over low heat. Blend the flour
into the melted butter and add the salt. Cook over low, stirring for 4
to 5 minutes to eliminate the "flour taste." Slowly whisk in the milk,
constantly whisking and cooking until smooth and thick.
Add cheese, cooked sausage or chopped chipped beef to put over toast.
THIN WHITE SAUCE
Use 1 tablespoon of butter
1 tablespoon of flour
THICK WHITE SAUCE
Use 3 tablespoons of butter
3 tablespoons of flour
HEAVY WHITE SAUCE
Use 4 tablespoons of butter
4 tablespoons of flour
All of the above recipes make 1 cup of sauce.
Silky Béchamel Sauce from Scratch
5 TBS
homemade unsalted butter
4 TBS flour
4 cups milk
2 tsp salt
1/4 tsp freshly grated nutmeg
In a medium saucepan, heat the butter over medium-low heat until melted.
Add the flour and stir until smooth. Over medium heat, cook until the
mixture turns a light, golden sandy color, about 6 to 7 minutes.
Meanwhile, heat the milk in a separate pan until just about to
boil. Add the hot milk to the butter mixture 1 cup at a time, whisking
continuously until very smooth. Bring to a boil. Cook 10 minutes,
stirring constantly, then remove from heat. Season with salt and nutmeg,
and set aside until ready to use.
For standard Béchamel Sauce:
After adding the milk to the medium white sauce recipe, place one small
onion that is studded with 3 cloves, a bay leaf, and a grating of nutmeg
or cinnamon. This makes 4 cups of sauce.
