Juicy Oven Fried Chicken Recipe

This oven fried chicken recipe produces a tender and juicy piece of chicken.

Oven Fried Chicken Recipe


2-3 lbs chicken breasts, thighs or legs
1 cup bread crumbs
1 tsp homemade garlic powder
1 tsp homemade onion powder
1 tsp salt
1 tsp ground black pepper

1/2 tsp thyme
1/2 tsp paprika
1 cup homemade mayonnaise, recipe below

PREHEAT oven to 350 degrees. You will need a wire cookie rack and lightly spray a baking sheet with oil.

In a resealable plastic bag, mix together the bread crumbs, garlic powder, onion powder, salt, pepper, thyme and paprika.

Coat the chicken pieces with mayonnaise and place chicken pieces in bag with bread crumb mixture and shake until evenly coated. Place chicken pieces on the wire cookie rack. Below chicken, place the baking sheet to catch any crumbs and grease. Bake for 45 minutes or until juices run clear.

Also for this oven fried chicken recipe, you may also mix 1/2 cup of mayonnaise with 1/2 cup of ranch dressing, and coat the chicken with this mixture. It's delicious.


HOMEMADE MAYONNAISE: (base of salad dressing)
2-1/2 cups canola oil, divided
2 eggs, room temperature
6 TBS vinegar
2 tsp dry mustard
2 tsp kosher salt
pinch cayenne pepper

To make the mayonnaise:
Place 1/4 cup of oil, salt, cayenne pepper, mustard and egg into a blender or food processor and pulse until completely blended.

SLOWLY add a thin stream of the remaining canola oil while the appliance is running until all is processed. Add the lemon juice and vinegar and whip until smooth and creamy. Store in a airtight container in the refrigerator before serving.

Now that the mayonnaise is made, you will need two cups for the ranch salad dressing recipe below:

Ingredients for Homemade Ranch Dressing:

2 tablespoons dry parsley flakes
1/2 teaspoon freshly ground black pepper
1 teaspoon onion salt
2 cups homemade mayonnaise, recipe above
1 cup homemade sour cream
1/2 teaspoon garlic salt
1/2 teaspoon kosher salt
1 cup buttermilk*

Combine all ingredients. Allow flavors to blend overnight. Reduce recipe in half if desired.

Use for salads or any other recipes requiring a ranch dressing like dunking home fries and chicken nuggets. It's that good.

*If you do not have buttermilk, measure out 1 cup of milk and add 1 tablespoon of vinegar; let sit for 15 minutes. Now it's ready to use. This will be one of your favorite homemade salad dressings.
