BRAEBURN: crisp, firm, sweet, tart and spicy. They are a excellent eating apple; and make good pies, sauces and cider.
EMPIRE: these apples are a hybrid of MacIntosh and Red Delicious. They are juicy, soft and sweet. Empires are a very good choice for a eating apple and make a good pie. Stay away from making sauce and cider with this one.
FUJI: they are extra crisp and sweet-tart. Excellent eating apple, but not a good choice for pie or sauces. It’s good for cider.
GALA: mildly sweet, fruity and thin skinned. Gala is another great choice for a eating apple. It is good for a pie but there are better choices out there. It is good for sauce and cider.
GOLDEN DELICIOUS: firm, very sweet, juicy and best when kept refrigerated. Very good eating apple and excellent for pies, sauce and cider.
GRANNY SMITH: crunchy, tart and juicy. They are a very good eating apple and are excellent for pies. Very good for sauce but stay away when making cider.
MACINTOSH: tender and sweet. They are a excellent choice for an eating apple. They make very good sauce. They make good pies and cider.
RED DELICIOUS: juicy and very sweet. They are a great eating apple, but use another kind for baking and cider.
ROME: grainy, sweet, soft and juicy. They are not a good eating apple, but are very good for pies. They are excellent for baked apples and make good sauce. Stay away from this apple if you want to make cider.
WINESAP: firm, tart, sweet-sour contrast. They make a good eating apple and are excellent for pies, baking, sauce and cider.
Another tip: If you do not have tart apples to bake with, use the sweeter apples and sprinkle lemon juice over them for tartness. Works every time.

Easy Apple Recipes
BUTTERSCOTCH APPLE PECAN COBBLER
12 oz pkg butterscotch chips
1/4 cup brown sugar, packed
1/4 cup flour
1/2 tsp cinnamon
2-1/2 lbs tart apples, peeled and diced
TOPPING:
1/4 cup brown sugar, packed
1/2 cup flour
4 TBS butter
1 cup pecans, chopped
3/4 cup oatmeal
PREHEAT oven to 375 degrees.
In a small bowl – combine chips, brown sugar, flour and cinnamon; set aside. Place apples in a 9×13 pan and sprinkle with the chip mixture. Bake for 20 minutes.
Meanwhile, combine the flour and brown sugar; cut in the butter until crumbly. Stir in the pecans and oats; and sprinkle over the baked apple mixture.
Bake another 30 to 40 minutes longer until the apples are tender. Cool slightly and serve with ice cream or whipped cream. I love this easy apple recipe in the winter.
Make this applesauce in a slow cooker. Double or triple the recipe. No need to smash the apples because the slow cooking will do it for you. This easy apple recipe takes approximately 3-4 hours to cook on high.
HOMEMADE APPLESAUCE FROM SCRATCH
4 apples – peeled, cored and sliced
1/2 cup water
1/4 cup white sugar
1/2 tsp cinnamon
Add the apples and water in a saucepan and bring to a boil. Simmer over low heat, stirring occasionally for 20 minutes. Add the sugar and stir until it dissolves. Add the cinnamon and stir well. Use this easy apple recipe for the cake below.
Serve warm over ice cream or refrigerate.
APPLE STRUEDEL
Dough
2 cups flour
1 TBS baking powder
2/3 cup milk
1/2 tsp salt
2 TBS white sugar
6 TBS butter or shortening
Filling
3 TBS butter, softened
1/3 cup brown sugar
3/4 tsp cinnamon
2-1/2 cups chopped apples
Frosting
1-1/2 cups powdered sugar
2 TBS hot water
1 tsp vanilla
1 tsp white sugar, garnish before baking
Sift flour, measure and sift twice with salt, baking powder and sugar. Cut in butter. Add milk to form a soft dough. Turn out onto a slightly floured surface
PREHEAT oven to 400 degrees and grease a cookie sheet.
Knead dough gently and roll out into a rectangle approximately 1/4 inch thick. Spread with softened butter. Sprinkle with sugar, cinnamon and then apples.
Roll up jelly-roll style and seal ends well and place on the prepared baking sheet. Gently curl roll into a horseshoe and sprinkle with teaspoon of white sugar. Bake for 30 minutes.
Cool slightly and drizzle with frosting that was made by blending powdered sugar with water and vanilla.
HOMEMADE APPLE FRITTERS FROM SCRATCH
1 cup flour
1-1/2 tsp baking powder
3 TBS sugar
1/4 tsp salt
1 egg, beaten
1/3 cup milk
1 TBS cinnamon
1/8 tsp nutmeg
1 cup chopped apples
1 cup canola oil
powdered sugar for dusting
Measure and sift all the dry ingredients. Beat the eggs and milk together and slowly incorporate the dry ingredients. Add the chopped apples.
In a heavy skillet or cast iron pan, heat the oil over medium high heat. Drop a teaspoon full of batter into the hot oil, and fry until golden brown –3 to 4 minutes on each side.
Remove fritter and drain on paper bag or towel. Cool and sprinkle with powdered sugar or roll in granulated sugar.
NOTE: You can eliminate the sugar and serve these fritters with pork roast. Awesome easy apple recipe.
HOMEMADE HOT APPLE CIDER
6 cups natural pressed apple cider (no sugar added)
1/4 cup pure maple syrup
2 cinnamon sticks
6 whole cloves
6 whole allspice berries
1 orange peel, cut into strips
1 lemon peel, cut into strips
2 McIntosh apples, chopped in small pieces
Pour the apple cider and pure maple syrup in a sauce pan. Add the cinnamon sticks, cloves, allspice berries, orange and lemon peel in the center of a washed square of cheesecloth – fold up the sides of the cheesecloth to enclose the bundle and tie with kitchen string.
Drop this spice bundle in with the apple cider mixture. (You may just let the spices float in the cider if you do not have a cheesecloth. Both ways are wonderful.)
Place the pan over moderate heat for 5-10 minutes, or until the cider is very hot but NOT boiling. Remove from the heat and discard the spice bundle. Add small pieces of apple in the bottom of the mug and pour in the hot cider.
Garnish with a fresh cinnamon stick if desired and you have one delicious easy apple recipe to share with friends and family.
HOMEMADE APPLE BARS FROM SCRATCH
2 cups shortening
1 cup hot water
8 large apples, sliced
1 cup sugar
1 tsp cinnamon
1 tsp salt
3 cups flour, plus
PREHEAT oven to 375 degrees and you will need a jelly roll pan.
Mix shortening, salt, flour and hot water for the crust. Roll out 1/2 of the dough and press into the bottom of the jelly roll pan. Mix apples, sugar and cinnamon together and spread on top of the crust.
Roll out the other half of the dough to fit the top. Sprinkle dough with sugar. Bake for 1 hour or until apples are tender. Top this easy apple recipe with homemade whipped cream.
There is an optional glaze you can use for this at the end of the recipe.
HOMEMADE APPLE BANANA BREAD RECIPE
1/2 cup butter
1/2 cup brown sugar, packed
1/2 cup white sugar
2 eggs
3 TBS sour cream
2 ripe bananas, mashed
1 tsp pure vanilla extract
2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
2 apples, cored and chopped
1/2 cup walnuts, chopped (optional)
PREHEAT oven to 350 degrees, and grease a loaf pan.
Cream together butter and both sugars, and then the eggs. Stir in the sour cream, bananas and vanilla extract. In a separate bowl combine the flour, baking powder, baking soda, and cinnamon. Gradually add this to the creamed mixture.
Gently fold in the apples. Spoon into the loaf pan and bake for approximately 1 hour.
Top with glaze and walnuts if using (optional).
Simple Glaze: In a bowl, mix together 1 cup of powdered sugar (confectioner’s sugar), 1-1/2 teaspoons of water, and a touch of vanilla. Pour over warm (not hot) bread.
HOMEMADE APPLE CRISP FROM SCRATCH (Apple Crumble)
4 granny smith apples, sliced
1 cup brown sugar, packed
1 cup flour
1 cup rolled oats
1-1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup butter, frozen and grated with cheese grater
PREHEAT oven to 375 degrees.
Place the apples in the bottom of an 8 or 9″ square baking dish. In a separate bowl combine the rest of the ingredients, and spread the mixture over the apples. Bake for 35 minutes. Serve warm with homemade vanilla ice cream and drizzle with homemade caramel sauce.

HOMEMADE APPLE COBBLER WITH CARAMEL
8 granny smith apples, peeled, cored and cut into 1/2 inch wedges
1/2 cup heavy cream
1 cup homemade brown sugar, packed
3/4 cup white sugar
1/4 cup brandy
1-1/2 sticks PLUS 2 TBS butter, chilled
1 TBS vanilla extract
3/4 tsp salt
1-1/2 cups flour
1/2 tsp cinnamon
1/2 cup chopped pecans, toasted
2 cups homemade whipped cream
PREHEAT oven to 375 degrees. Grease a 9×13 inch baking dish.
Put the apples in the prepared baking dish. In a saucepan, bring the heavy cream, 1/2 cup brown sugar, 1/2 cup white sugar, brandy, 2 TBS butter, the vanilla and 1/2 tsp salt to a boil, whisking. Lower the heat to medium and cook until thickened, about 5 minutes; pour over the apples.
In a food processor, combine the flour, remaining 1/2 cup brown sugar, 1/4 cup white sugar, 1/4 tsp salt and the cinnamon. Cut the remaining 1-1/2 sticks of butter into 1/2 inch pieces; add to the flour mixture and pulse until coarse crumbs form; stir in nuts.
Scatter the topping over the apples and bake until golden brown, approximately 1 hour. Let cool for 10 minutes. Serve with whipped cream.
