This is a Sicilian Meat Sauce recipe adapted from the Italian restaurant Amato's Holiday House in Madison, WI which has been closed for years.
Spaghetti Meat Sauce from Scratch
1 pound lean ground beef
1 pound ground Italian Sausage
1 cup chopped onion
4 minced garlic cloves
28 oz can crushed tomatoes
15 oz can tomato sauce
6 oz can tomato paste
2 TBS sugar
1-1/2 tsp dried basil
1-1/2 tsp oregano
1 tsp Italian seasoning
1/2 tsp fennel seeds
1 bay leaf
1/2 tsp salt
1/2 tsp freshly ground black pepper
Cooked spaghetti or Vermicelli
1/2 cup freshly grated Romano cheese
In a large heavy skillet or kettle brown the ground beef and Italian sausage. When brown, add the onion and then the garlic. When the onion is soft add the crushed tomatoes, tomato sauce and tomato paste. Bring to a boil, lower heat and simmer uncovered for 30 minutes.
Add seasonings, cover and continue simmering for 1-1/2 hours, stirring occasionally. Serve with pasta and top with grated Romano cheese. Serves 12.
If there seems to be too much grease after browning the meat, you may want to drain it a little leaving just enough to saute the chopped onion.
