You are going to LOVE these apple pumpkin streudel muffins. So moist and sweetly spiced, makes the perfect autumn treat.
Apple Pumpkin Streudel Muffins
2-1/2 cups all purpose flour
3/4 cup white granulated sugar
3/4 cup brown sugar
2 TBS pumpkin pie spice (recipe below)
1 tsp baking soda
1/2 tsp salt
2 lightly beaten eggs
1 cup pumpkin puree (how to make below)
1/2 cup olive or vegetable oil
2-1/2 cups peeled and diced apple
1/2 cup chopped walnuts
PREHEAT oven to 350 degrees and line muffin tin with paper liners or spray with oil.
Sift the flour, white and brown sugars, pumpkin pie spice, baking soda and salt together in a bowl.
In a mixing bowl, whisk the eggs, pumpkin puree and oil together until well blended. Add this mixture to the dry ingredeints and stir just to moisten – do not overstir.
Fold in apples and nuts and spoon batter into the muffins cups. Sprinkle the streudel topping over each muffin. Bake for 32 to 40 minutes or until a toothpick inserted in the center of the muffin comes out clean. Devour.
Streusel Topping
2 TBS all purpose flour
1/2 cup white granulated sugar
2 tsp cinnamon
2-1/2 TBS unsalted butter
Mix the flour, sugar and cinnamon together first and then cut in the butter until it resembles coarse crumbs. Sprinkle evenly over muffin batter before baking.
Homemade Pumpkin Pie Spice
4 TBS cinnamon
4 tsp nutmeg
2 tsp ginger
1 tsp cloves
1/2 tsp allpice (optional)
Mix together and store in an airtight container. Measure out 2 tablespoons for this recipe.
Homemade Pumpkin Puree
Use this instead of canned pumpkin. Purchase small to medium size sugar or pie pumpkin. Clean and slice meat from the rind.
Cut pumpkin into squares and bake in a covered (or larger) dish with a little bit of water in the bottom of the dish.
Bake for 25 to 30 minutes or until pumpkin is very tender. Remove, and put into a blender and process to make puree. You may have to add a touch of water to thin it out.
