This is a 3 step “pick your favorite beer” kind of recipe. Now you do have an excuse to have a beer when cooking…

Cajun Rub
2 TBS homemade Cajun (creole) seasoning
2 TBS kosher salt (NOT table salt)
1 tsp homemade garlic powder
1 tsp homemade onion powder

5 to 6 lbs venison side ribs
1 large onion, sliced
2 jalapeno peppers, sliced

2 cups blueberries, raspberries or peaches divided
1/4 cup homemade unsalted butter
1/2 cup homemade brown sugar, packed
1/4 cup honey
1/8 to 1/4 cup homemade hot sauce (optional)
3 TBS homemade barbecue sauce

PREHEAT oven to 325 degrees.

Mix the first four ingredients together (seasonings) and rub completely on the ribs.

In a large roasting pan, place the sliced onion and jalapeno on the bottom. Place the ribs on top and pour the beer in the bottom of pan.

You can also do this step in a crock pot and have the ribs cook on low until tender. But you do NOT want the meat falling off the bone at this point.

When they are almost done, place 1 cup of the fruit (either blackberries, raspberries or peaches), butter, brown sugar, honey, hot and barbecue sauce in a small saucepan. Mash the berries down and stir just until boiling. Remove from heat.

Get the grill going on medium-high and slather ribs with the barbecue sauce you just made (there will be some left over). Grill for approximately 20 minutes total; 10 minutes per side.

To serve, use the remaining sauce and garnish with the other cup of fruit.

You may also use homemade barbecue sauce if you would like.  I have several that you will love.
