This is the best BBQ rub recipe. In fact, every one of these homemade meat rub recipes are worth their weight in gold.

These grilling rubs produce succulent and juicy meat, fish and poultry. I have rubs for roast, rubs for fish and rubs for poultry.  Enjoy!

BBQ Rub Recipe

What is a rub? Rubs are applied to the surface of meat/poultry/fish just before grilling. There is no standing time.

You may use a rub several hours in advance and then place the coated meat in the refrigerator overnight.

Flavors are best when the rub is on the meat for a longer time period. Now on to my famous BBQ rub recipe(s).


1-1/2 tsp lemon peel, grated
1 tsp rosemary
1/4 tsp thyme
1/4 tsp freshly ground black pepper
1/4 tsp kosher salt
2 garlic cloves, minced

Mix all of the ingredients together and rub on steak or roast. Just wonderful. Will season two pounds of beef.


1-1/2 tsp homemade chili powder
1 tsp homemade garlic powder
1 tsp homemade onion powder
1/2 tsp oregano
1/4 tsp cumin

Combine all ingredients and rub on steak or roast. Will season two pounds of beef.

My next best bbq rub recipe is put on ribs before grilling. Use heaping measurements, and do not skimp when rubbing on the meat.


6 (remember, heaping tablespoons) TBS kosher salt
6 TBS white sugar
1 TBS dry lemon powder*
2 TBS freshly ground black pepper
1 TBS paprika

*Just place thin slices on a baking sheet and cook until dry. Place in a blender and pulse until it’s in powder form.


1/2 cup homemade chili powder
1/2 tsp celery salt
1/2 tsp homemade garlic powder
1/2 tsp homemade onion powder
1/4 tsp curry powder
1/4 tsp dry mustard
1/4 tsp oregano
1/4 tsp parsley
1/4 tsp freshly ground black pepper

canola oil

Mix all ingredients together. Brush oil over the food to be barbecued. Generously sprinkle the spices over the food and spread in well with the brush or use your fingers.


You can continue to coat your meat with this rub, just mix with a little oil and brush on while it’s cooking.


6 TBS kosher salt
3 TBS freshly ground black pepper
2 TBS homemade garlic powder
2 TBS dry mustard
1 TBS ground bay leaves
1 TBS paprika

Mix well and sprinkle on chicken before grilling. Makes approximately one pound of dry poultry seasoning.

1-1/4 TBS paprika
1-1/2 tsp kosher salt
1 tsp homemade garlic powder
1 tsp homemade onion powder
1/2 tsp freshly ground black pepper
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp homemade cayenne pepper, optional (or to taste)

2 TBS canola oil
3 pound beef roast (sirloin tip)

PREHEAT oven to 200 degrees and line a cookie sheet with foil.

In a small bowl, mix all of the spices (first 8 ingredients) together. Stir in the olive oil, and allow the mixture to sit approximately 15 minutes, for spices to meld.

Place the roast on the prepared baking sheet, and cover on all sides with the spice mixture. Roast 1 hour per pound, or until a thermometer reads 145 degrees (medium-rare). Let sit 10 minutes before slicing.
