Easy chicken soup recipe?  When I don’t feel so good and am wanting chicken soup I make this tasty imposter that tastes like it was simmering all day. 

This easy chicken soup recipe is a keeper and tastes just as good.  All you need is a rotissiere chicken and 15 minutes.

Easy Chicken Soup Recipe

Flu Fighting Chicken Soup Recipe

rotisserie chicken
1 TBS oil (I use avocado oil)
1/ tsp dried thyme
small bag baby cut carrots
small onion
3-4 celery stalks
1 tsp garlic powder
1 tsp onion powder
3 TBS Better than Bouillon Roasted Chicken Base

Pour oil in the bottom of a 5 quart stock pot and add thyme.  Chop 1/2-3/4 of the small bag of carrots and add to the oil.  Chop the celery and onion and do the same.  Let them saute for 10 minutes.  

Meanwhile begin removing the chicken and putting on a plate.  Discard the skin.  Keep the juice on the bottom of the chicken container and pour over the sauteing vegetables. 

When the vegetables are almost fork tender add the chicken and sprinkle the parsley, garlic and onion powder over it.  Add water until stock pot is 3/4 full or when water is just a few inches over the ingredients.  Turn up the heat to high.

Begin with 2 tablespoons of Better than Bouillon and let it dissolve as the soup warms.  I usually need 3-4 tablespoons to satisfy my taste buds.  Bring to a boil, reduce heat and simmer soup for 5-10 minutes – it is ready to eat.

I dunk soft buttered bread in the soup – so good.  Usually I am feeling under the weather when I make this and drink orange juice with it.  I feel like myself in no time.


Recipe Notes

  • You may add peas, mushrooms or chopped potatoes to your soup, it is up to you 
  • If you want noodles, cook them separately and those that want noodles may add them to their bowl of soup before eating (Reames are delicious and in the freezer section of the store) 
  • Add croutons
  • Add spice to clear sinuses when you have the cold or flu:

1/4-1/2 tsp cayenne pepper
