Easy Casserole Recipes from Scratch

You will love this easy casserole recipe. You may use 4 chops instead of 8 – it’s depends on how many you are serving. You may stuff them instead of having the stuffing on top. Just cover with gravy…
BAKED PORK CHOP CASSEROLE
8 pork chops (or any amount)
8 slices bread, ripped up small pieces
2 eggs, beaten
2 cans cream corn
1 small onion, chopped
salt and pepper to taste
PREHEAT oven to 350 degrees.
Brown chops slightly in a heavy frying pan and lay in the bottom of a greased roasting pan. Sprinkle with salt and pepper.
Make a dressing as follows:
Mix corn and bread, add eggs and chopped onion. Salt and pepper to taste. Mix together well and spoon over the chops. Bake for 1 hour.

BACON AND RICE CASSEROLE
2 cups instant rice – uncooked
2 cups chicken broth
1/2 pound bacon, chopped
salt and pepper to taste
PREHEAT oven to 350 degrees. Grease a casserole dish.
Cook the rice in broiling broth and let sit. Meanwhile fry the bacon until crisp. Place the rice in the prepared baking dish – salt and pepper to taste. Add the bacon and 2 tablespoons of the bacon fat to the rice; mix well. Bake for 25 to 30 minutes. Mix again before serving.

EASY BEEF BURGUNDY (Beef Bourguignon)
1/3 cup flour
2 tsp salt
1/4 tsp black pepper
4 lbs bottom round beef
6 TBS homemade unsalted butter, divided
3 TBS brandy
3 medium onions, sliced
3 carrots, sliced
3 sprigs parsley
2 bay leaves
dash of thyme
1 garlic clove
3 cups dry red wine
6 bacon slices, half cooked
1 TBS tomato paste
1 cup mushrooms, sliced
Combine flour, salt and pepper. Cut beef into 1-1/2 inch cubes and roll in flour mixture to coat. In a heavy saucepan over high heat, brown meat in 4 tablespoons of butter. Add brandy and set on fire. Saute onions and carrots for five minutes in the remaining butter in a separate pan.
Add sauteed vegetables to meat and stir in the remaining ingredients EXCEPT the mushrooms and tomato paste.
Add enough water to cover the meat. Cook on low for 2-1/2 hours. Stir in remaining ingredients and cook for another 30 minutes. Serve over noodles.
For this easy casserole recipe, you may also use 6 to 7 pounds of regular spare ribs. Let me assure you, this easy dinner recipe will be requested often.
BAR-B-QUE COUNTRY-STYLE RIBS
4 to 5 lbs country-style spare ribs
Arrange in the bottom of a greased baking dish. Slice a lemon and onion and arrange over the spareribs.
Mix together:
3/4 cup homemade ketchup
3/4 cup water
2 TBS homemade vinegar
2 TBS homemade worcestershire sauce
1 TBS salt
1 tsp paprika
1/2 tsp black pepper
1 tsp homemade chili powder
PREHEAT oven to 325 degrees.
Pour the mixture over the ribs and bake for 3 hours.
BACHELOR’S CASSEROLE
1 lb ground beef
1 tsp homemade garlic powder
1 tsp homemade onion powder
1/2 cup uncooked rice
1 can homemade cream of mushroom soup
3 oz mushrooms, sliced
PREHEAT oven to 350 degrees.
Place the ground beef in a skillet and season with garlic and onion powder. Brown ground beef and cook rice as directed on the package. In a greased casserole dish, combine the ground beef, rice, soup and mushrooms. Season with salt and pepper to taste. Bake for 30 minutes.
This is a easy casserole recipe that is served as a side dish with chicken and a salad.
BAKED RICE DISH
1/2 cup uncooked brown rice
1/2 cup uncooked white rice
1 can homemade cream of celery soup
1 can homemade cream of chicken soup
1 can water
1 cup fresh mushrooms, chopped
1/2 pkg homemade dry onion soup mix
PREHEAT oven to 350 degrees.
Mix all ingredients together and bake in a greased casserole dish for 1-1/2 hours covered, then 30 minutes uncovered.
This easy casserole recipe may not be the typical casserole, but I know one thing…It’s delicious!
BBQ CHUCK ROAST
5 lbs boneless chuck roast, chunked
1 large onion, chopped
1 bunch celery, chopped
1 green pepper, chopped
4 cups homemade ketchup
1 tsp salt (or to taste)
1 tsp black pepper (or to taste)
dash of homemade worcestershire sauce
1 cup water
dash of homemade hot sauce
Combine all ingredients in a bowl. Put meat in a dutch oven and pour sauce over meat. Bring to a boil over medium heat, then burn down to low and cook for 8 to 10 hours. This can be put in a slow cooker to simmer for that time. You can also bake this in the oven at 250 degrees.
QUICK BEEF STEW RECIPE
PREHEAT oven to 325 degrees.
Cut beef in bite-sized pieces and roll in flour. Melt 3 tablespoons of butter in a large skillet and brown the pieces. Season with 1 teaspoon of garlic powder and 1 teaspoon of onion powder. Salt and pepper to taste.
Cut potatoes and small onion in small pieces and slice the carrots. Place vegetables in a greased casserole dish and cover with browned meat.
Add two cups of water and 2 beef bouillon cubes to butter in the skillet and stir until cubes are dissolved. Pour over all and bake for 1-1/2 hours. Stir after one hour of cooking.

BEEF AND CABBAGE CASSEROLE
1 small head of cabbage
1 cup uncooked rice
2 cans tomato soup OR 1 quart canned tomatoes
1 cup uncooked rice
medium onion, grated
1 lb hamburger
1 tsp homemade garlic powder
1 tsp homemade onion powder
4 slices bacon, chopped and fried (leave grease in pan)
1 TBS sugar
butter
PREHEAT oven to 375 degrees. Grease a casserole dish; set aside.
Cut cabbage into rather small chunks and cover with boiling water. Let stand 10 minutes.
Mix the hamburger with salt, pepper, grated onion, cooked bacon, garlic and onion powder. Make very small meat balls and brown in the bacon grease.
Drain cabbage and layer in the prepared casserole dish. Top with the meatballs and onion. Pour rice overall. Mix the tomato soup with 2 cups water and one or two bouillon cubes. (or canned tomatoes with the same amount of cubes).
Sprinkle with sugar and dot with butter. Cover and bake for 30 minutes or until rice is done. Uncover and continue to bake until all is done and has a nice color on top.
This easy casserole recipe is a one-dish wonder. You may also substitute beef stew meat in this recipe. Delicious!
BEEF STEAK PIE WITH POTATO CRUST
1 lb round steak, cut into 1″ cubes
2 TBS butter
1 TBS canola oil
1 tsp homemade garlic powder
1 tsp homemade onion powder
1 large onion, thinly sliced
3 TBS flour
1-1/2 tsp salt
1/4 tsp black pepper
dash of thyme
2 cups water
3 medium potatoes, Peeled and thinly sliced
salt and paprika to taste
PREHEAT oven to 350 degrees. Grease a 2 quart baking dish.
Dredge meat in flour and place in skillet with melted butter and oil. Season with garlic and onion powder. Brown meat until very brown and crusty and place in dish.
Saute onions until golden brown; place over meat. Sprinkle with flour, salt, pepper and thyme. Pour water over the top and bake 45 minutes to one hour, or until meat is tender. Remove and increase oven temperature to 450 degrees.
Place sliced potatoes on top and sprinkle with salt and paprika. Return to oven and bake approximately 30 minutes or until potatoes are browned and tender.

BEEF N’ DUMPLING BAKE
2 lbs round steak – cut in 1 inch cubes
1 bay leaf
2 medium onions, sliced
1 can homemade cream of chicken soup
1 can homemade cream of onion soup
1 TBS homemade worcestershire sauce
1/3 cup flour
1 (10oz) pkg frozen peas
PREHEAT oven to 350 degrees. Grease 3 quart casserole dish.
Place steak in prepared casserole dish and cover with onion slices and bay leaf. Combine the two condensed soups together and add the worcestershire sauce. Add flour and mix. Pour over the meat and onions. Cover and bake for 2-1/2 hours or until tender.
When done, remove from oven and increase temperature to 400 degrees. Remove the bay leaf and sprinkle the peas on top of the homemade casserole. Drop rounded teaspoonfuls of dumpling mixture (recipe below) over peas. Cover and bake for 20 to 25 minutes.
Parsley Dumplings
1 egg
1/3 cup milk
2 TBS minced parsley
2 TBS vegetable oil
1/4 tsp sage
1 cup sifted flour
1-1/2 tsp baking powder
1/2 tsp salt
Combine the first 5 ingredients. Add dry ingredients and mix only until ingredients are moistened. Do NOT overmix.
