The first of my grouse recipes is a comfort food that will be made often; my grouse carbonara. At the end of this page, you will find many more recipes and hunting/fishing links.


Ruffed Grouse Recipes
EASY GROUSE CARBONARA RECIPE

Ingredients

10 slices of bacon
3 to 4 cups grouse meat, cut into strips
1 small onion, chopped
1 tsp homemade garlic powder
1 tsp homemade onion powder

Sauce
2-1/2 cups whipping cream
1 tsp homemade garlic powder
1 tsp homemade onion powder
8 egg yolks
1 cup parmesan cheese, grated (not powder)
1/4 cup fresh basil or 3 TBS dried basil
kosher salt and freshly ground black pepper to taste

4 oz fettuccine or spaghetti noodles

Directions

In a large heavy skillet, fry bacon until cooked (not crispy); drain and set aside. Fry the grouse meat and onion in the bacon fat until meat is cooked through. Drain well. Discard the bacon fat.

Bring a large pot of salted water to a boil and cook the pasta. (I always put a teaspoon or two of canola or vegetable oil in the water so the pasta doesn't stick together.)

Meanwhile, in a large saucepan or dutch oven, whisk the sauce ingredients together and slowly heat to medium-low (no higher or the eggs will scramble).

When the meat/onion mixture and pasta is cooked and drained well, add that to the sauce ingredients. Cook until it is thickens and season with more salt and pepper if you need to.

Serve with a salad and crusty butter bread. So delicious.

ROAST GROUSE RECIPE

Ingredients

4 grouse, cleaned and quartered

2 TBS butter
2 TBS canola oil
1/2 cup flour
1 tsp salt
1/2 tsp oregano
1/2 tsp freshly ground black pepper
celery, onion, mushrooms, carrots - quartered
1/4 cup chicken broth
1/4 cup white wine
1 TBS butter, melted
1 tsp homemade garlic powder
1 tsp homemade onion powder
1/2 tsp thyme
1/2 tsp parsley

Directions

PREHEAT oven to 350 degrees. Spray a 9x13 pan with canola or vegetable oil; set aside.

Mix the butter and canola oil together in a large skillet and heat to medium. Mix the flour, salt, oregano and pepper together in a resealable bag. Add the grouse and shake well until evenly coated. Place in the heated skillet and brown all sides; remove.

Place the quartered vegetables in the bottom of the prepared baking dish and place the browned grouse over the vegetables. Mix the chicken broth, wine and butter together and pour over all.

Season well with garlic and onion powder, thyme and parsley. Sprinkle with kosher salt and freshly ground black pepper to taste. Bake for 1 hour or until the meat is cooked through and vegetables are tender. Add more chicken broth and wine if needed.




This is a wonderful grouse recipe. Please feel free to substitute chicken broth for the wine - great both ways.

"WILD GROUSE" RECIPE

Ingredients

2 grouse
1 cup flour
1 tsp salt
1 tsp pepper

2 TBS butter
2 TBS canola oil
1 cup mushrooms, sliced
1 small onion, chopped
1 cup white wine
1 cup heavy whipping cream
1/2 tsp homemade garlic powder
1/2 tsp homemade onion powder
cooked wild rice

Directions

Add the butter and oil to a heavy skillet and heat to medium. Mix the flour, salt and pepper together in a resealable bag and shake to mix.

Add the grouse pieces and shake to coat evenly. Place in the hot butter mixture and brown all sides; remove from pan. Saute the mushrooms and onions in the butter mixture until tender. Place the grouse back in the pan with the mushroom mixture and add the wine; simmer for 30 minutes. Remove the grouse and add the whipping cream, garlic and onion powder. Whisk well until it thickens; remove from the heat.

Place some rice on a plate and cover with the grouse and sauce. Serve with a salad and crusty homemade bread.


grilled grouse pizza recipe This is just a fantastic grouse recipe. Please feel free to top it with your favorite vegetables, I'm just giving you the ones I have used that really worked well. It's your pizza.

GRILLED GROUSE PIZZA

Ingredients

1 lb grouse breasts, boneless and skinless
2 medium green bell peppers
1 large red onion, sliced 1/2" thick
two 12" homemade pizza crusts


1-1/2 cups homemade pizza sauce
3 cups Monterey jack or cheddar cheese, shredded
2 TBS fresh cilantro, chopped
2 TBS canola oil

Directions

Lightly coat the grouse and onion with the canola oil and season to taste with kosher salt and freshly ground black pepper.

Grill the grouse, onion and peppers, turning once, 6 to 8 minutes or until grouse is thoroughly cooked and vegetables are tender. Wrap peppers in aluminum foil; let stand 5 minutes, then remove skin and thinly slice. Thinly slice grouse; set aside.

Place the pizza crusts (top side down) on the grill for one minute; remove. Evenly spread the crusts with the homemade pizza sauce and then top with the grilled grouse, vegetables and then the shredded cheese.

Grill the pizzas covered until the cheese is melted; approximately 3 minutes. Sprinkle with cilantro and serve with additional pizza sauce, sliced jalapenos and sliced avocado.

NOTE:
For this grouse recipe, you may also use a homemade marinade. Let the meat sit in the marinade for a hour or so before grilling.




This grouse recipe makes a wonderful easy dinner that is such a comfort food and requested often at my house.

GROUSE CASSEROLE

Ingredients

2 cups cooked grouse
1 pound broccoli florets, cooked
1 can homemade cream of mushroom condensed soup
1 can homemade cream of chicken condensed soup
1/2 tsp homemade garlic powder
1/2 tsp homemade onion powder
3/4 cup evaporated milk
2 cups cheddar cheese, shredded
1 pkg herb flavored dry stuffing mix
1 cup bread crumbs
2 TBS homemade unsalted butter, melted

Directions

PREHEAT oven to 350 degrees. Lightly spray a 9x13 pan with vegetable oil.

Whisk the cream soups with the evaporated milk and garlic/onion powders in a large mixing bowl. Add the cheese and stuffing mix. Then fold in the grouse and broccoli. Mix well and place in prepared baking dish and spreading to even it out.

Mix the bread crumbs with the melted butter and sprinkle mixture over the top. Bake for 30 minutes.

NOTE: You can use any fresh fish fillets for this recipe like walleye, crappie, perch, bluegill, cod, etc.


FRESH FISH TACOS

crappie (or blue gill) fillets
2 TBS canola oil for frying
2 TBS butter, for frying
1/2 tsp homemade chili powder
1 TBS honey
kosher salt and freshly ground black pepper
1 fresh lime
soft taco shells
cabbage slaw, recipe below

In a skillet over medium-high heat, heat the canola oil and butter for frying.

Meanwhile, dust the clean fillets with chili powder, kosher salt and then drizzle the lime juice and honey over them. Fry for 2-3 minutes, flip over and fry another 2-3 minutes. The crappie is done when it is opaque and flakes easily.

Heat the taco shells in a pan until it bubbles; flip and repeat.


TOPPINGS:
Chopped Cilantro
Homemade Salsa
Chunky Guacamole or Avocado
Red Onion Slices
Tomato Slices
Homemade Mayonnaise
Mango Salsa
kosher salt and freshly ground black pepper



CABBAGE SLAW

5 cups green, red or mixed cabbage, finely chopped
1/2 cup homemade sour cream
1/2 cup homemade yogurt
2 TBS fresh lemon or lime juice
1/2 tsp cumin powder
1/2 tsp dill weed
kosher salt to taste
freshly ground black pepper to taste
3 green onions, sliced thinly
1 jalapeno, seeded and finely chopped

Combine sour cream, yogurt, lime juice, cumin powder, dill weed, scallions, jalapeno, salt and pepper. Mix well. Reserve 1/2 of the mixture to top the tacos. Mix the other half with the cabbage.
