This pierogi casserole is delicious. If you like pasta, mashed potatoes and cheese you will love this. Offering delicious variations below.
Pierogi Casserole Recipe
12 lasagna noodles, cooked and drained
4 TBS butter
4 large onions, chopped (don’t worry they reduce drastically in recipe)
6 cups warm mashed potatoes
1-1/2 cups shredded cheddar cheese, halved
PREP
- PREHEAT oven to 375 degrees.
- Spray a 9×13 inch pan with oil
- Cook your lasagna noodles, drain and lightly spray with oil.
PROCEDURE
Melt butter in a frying pan and add the chopped onions. Saute until just turning light golden brown, remove from heat. Save half of the onions for later and add the other half to the warm mashed potatoes. Sprinkle half of the shredded cheese (3/4 cup) on the mashed potato mixture and stir to combine.
To Layer:
Place three cooked lasagna noodles on the bottom of the prepared pan. Spread 1/3 of the potato mixture over the noodles (this is one layer). Repeat, making sure the last layer has the lasagna noodles on top. Place the reserved onions on top of the lasagna noodles and then sprinkle with remaining cheese.
Cover and bake for 60-70 minutes. Serve with a fresh garden salad.

Dot with butter, cover with foil and bake at 350 degrees for one hour.
