EASY POUND CAKE RECIPES

Easy Pound Cake Recipes


This easy pound cake recipe is kind of a twist on a five-flavor cake. Please customize it to suit your taste - just use a few or many of your favorite flavor combinations. For the best flavor, (very important step) make this cake two days before you plan to serve it. More homemade cake recipes at the bottom of the page...


OLD FASHIONED TROPICAL POUND CAKE
Cake:
3 cups flour, sifted
1/2 tsp baking powder
dash of salt
1 cup butter
1/2 cup shortening
5 eggs, beaten
2-1/2 cups white sugar
1 cup milk
2 tsp pure mango extract
2 tsp pure rum extract

1 teaspoon each of the following extracts:
homemade pure vanilla extract
pure butter extract
pure rum extract
pure lemon extract
pure almond extract
pure pineapple extract

Invisible Icing
1/2 cup white sugar
1/4 cup water (you may use milk for more consistency)
2 tsp pure mango extract
1 tsp pure rum extract
1/2 tsp pure coconut extract
1/2 tsp pure pineapple extract

To make the icing, just pour water and white sugar in a small saucepan and bring to a boil; stirring constantly. Add the extracts, stir well and drizzle over the cake, making sure it soaks in before adding more spoonfuls.

PREHEAT the oven to 325 degrees and you will need a greased tube or bundt pan.

In a bowl, mix the flour, baking powder and salt together, and set aside for now.

In another bowl, pour in the milk and add the extracts to flavor the milk and set aside.

Now in a mixing bowl, cream the butter and shortening together. Add the sugar and beat well. Add 1 egg at a time, beating well after each addition.

Now alternate adding the flour mixture and the flavored milk, making certain you beat well and end with the flour mixture.

Pour into your prepared pan and bake for approximately 1-1/2 hours, testing with a toothpick until it is clean.

I normally drizzle the cake with half of the icing right after it comes out of the oven. I let it sit in the pan for 10 minutes and then cool completely on a wire rack, and then drizzling with the rest of the glaze. Enjoy this homemade pound cake recipe.

FEATURED RECIPE:


HOMEMADE STRAWBERRY MUFFIN RECIPE

2 cups flour
1 cup white sugar
1 TBS baking powder
1/2 tsp salt
2 eggs, slightly beaten
1 cup milk or half-and-half
1/2 cup vegetable oil
1/2 tsp strawberry extract (optional)
1-1/2 cups fresh strawberries, quartered

Top the muffins with my Old-Fashioned Cream Cheese Frosting
(only make half of the recipe)

whole strawberries, halved (garnish)
powdered sugar (garnish)

PREHEAT oven to 400 degrees. Grease or use paper lined muffin tin; set aside.

In a large bowl, combine the flour, sugar, baking powder and salt. Combine eggs, milk, oil and strawberry extract. Stir into the dry ingredients and mix JUST until incorporated (there will be lumps). Fold in quartered strawberries.

Spoon into greased muffin tins and sprinkle tops lightly with white sugar. Bake for 18 to 20 minutes or until golden brown.

Sprinkle lightly with powdered sugar and top with a dollop of cream cheese frosting. Nestle a halved strawberry on top and smile. You just created a "good thing."


Strawberry Banana Muffins
add 3/4 cups strawberries and
3/4 cup chopped banana


Strawberry Rhubarb Muffins
add 1 cup strawberries and
1/2 cup chopped rhubarb
