There’s Pudding in the Mix

I love this mini cinnamon roll recipe. The bite sized morsels are extra moist because there is pudding in the mix.  Drench in icing when warm – these truly are a bite of heaven.

Mini Cinnamon Roll Recipe  aka “Baby Bun Bites”

Dough:

1 pkg active dry yeast
1 TBS granulated sugar
1/4 cup water (110 degrees F)

1/3 cup instant vanilla pudding mix
1 egg
1 cup milk
1 tsp salt
1/4 cup butter, melted
3 to 3-1/2 cups all purpose flour

Filling:

3/4 cup brown sugar
1 TBS cinnamon
1/4 cup melted butter

Icing:

2 cups powdered sugar
1/2 cup butter, softened
2 tsp water
2 tsp vanilla

Dough:

In a bowl, dissolve yeast and 1 tablespoon of sugar in the warm water.  

In another bowl, beat milk and pudding mix on low.  Let stand one minute.  Add egg, butter, salt, yeast mixture and 2 cups flour to the pudding mixture.  Beat on medium speed until smooth.

Stir in enough flour to form a soft dough.  Knead until smooth, about 6-8 minutes.  Place in a greased bowl, turning once to grease the top of the dough.  Cover and let rise until doubled in size, about one hour.  

Filling:

In a bowl mix the sugar and cinnamon together. 

Punch down the dough; divide in half.  Roll each half into an 18″ x 10″ rectangle. Brush with 2 tablespoons butter and sprinkle each half with half of the cinnamon sugar mix.  Roll up, pinch seam to seal.  Cut into 12 rolls per half and cut each roll into quarters so each roll = 4 mini bites. 

Place in greased 9×13 inch pan.  Cover and let rise until doubled.  

PREHEAT oven to 350 degrees and bake for 9-13 minutes watching carefully until they turn golden brown.  

Icing:

Beat the ingredients together until creamy.  Drop warm mini bites into icing and remove with tongs onto waxed paper.
