This grilled chicken recipe includes the star of the recipe Homemade Apricot BBQ Sauce. You may also use peaches - both are delicious.
Best Grilled Chicken Recipe
STONED BBQ CHICKEN
4 chicken breasts (thighs, wings or legs)
Rub the chicken with olive oil and heat the grill to medium. Lightly oil the grates and grill chicken turning every 3-5 minutes until almost done. During the last two turnings of the chicken, top with the barbecue sauce and then remove from the heat. Let sit for 5-10 minutes before serving.
Apricot Barbecue Sauce
1/2 cup apricot preserves 3/4 cup your favorite bbq sauce (Sweet Baby Ray's Honey is delicious) 1/2 tsp cinnamon 1 TBS vinegar 1/4 tsp cayenne pepper (or to taste), optional
Heat and mix together in a small saucepan for a few minutes and remove.
Use peach preserves or mixture of both apricot and peach preserves for your own personal "Stoned (fruit) BBQ Chicken" recipe
Double recipe for covering the chicken and dipping (I usually do anyway)
