If you like pancakes, you will LOVE my pancake recipe. These pancakes put Aunt Jemima to shame. It produces the fluffiest pancakes you've ever seen. Offering breakfast recipes that will make your family smile (at the end of the page).
These flapjacks are so fluffy and delicious - just add a bit of fruit (frozen blueberries are wonderful), for a real treat. Or you can add 1/2 tsp of cinnamon and top them with apple pie filling. Yum.
If you want, mix up the dry ingredients in advance and give as a gift with instructions. You can also store this so on the weekends it's "almost" ready to go. Great way to save money; now on to my easy pancake recipe.
Mix the dry ingredients together in a mixing bowl. Create a well in the middle of the ingredients and add the milk. If it's not the right consistency add a little more at a time.
Add the two eggs, vanilla and oil; whisking until mixed but still a little lumpy. Here's my secret: Let the batter rest for a good 10 minutes before cooking them (gives baking powder time to work - "fluffy pancakes").
Heat up a pan and add some butter (or shortening) and heat up. Pour in 1/4 cup of the batter and when bubbles form on the top, flip it over.
The first pancake is always a "test," so add more flour or milk if you need it. Keep the pancakes covered until the batter is gone; keeping them warm so everyone can eat together.
3/4 cup homemade mayonnaise 1/4 cup homemade cherry conserve 1/2 tsp curry powder 1/4 tsp salt 12 ounces crushed pineapple, well drained and squeezed dry 1/4 tsp lemon juice 2 cups finely chopped cooked chicken 1 cup finely diced celery 1/2 cup sliced green onion
First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
