1 cup peeled horseradish root
3/4 cup homemade white vinegar
2 tsp white sugar
1/4 tsp kosher salt

Process all ingredients in a blender or food processor. Carefully remove the lid and keep your face away from the container.

At this point, you can put it in a glass container and store in the refrigerator. You can also can it. Just pack into a sterilized bottle and seal.

Mix the horseradish with homemade ketchup for a great shrimp dip. Or mix with homemade mayonnaise, and you now have a terrific sandwich spread (I'm thinking roast beef).

FRESH CHICKEN SALAD RECIPE

3/4 cup homemade mayonnaise
1/4 cup homemade cherry conserve
1/2 tsp curry powder
1/4 tsp salt
12 ounces crushed pineapple, well drained and squeezed dry
1/4 tsp lemon juice
2 cups finely chopped cooked chicken
1 cup finely diced celery
1/2 cup sliced green onion

First combine the mayonnaise, chutney, curry powder and salt. Add remaining ingredients - chill before serving.
