May is here and I am already craving strawberries. A good thing, because fresh strawberries are now easier to find.

Before I forget, please feel free to send me ideas or any questions you may have or on what you want me to cover in this newsletter.

If you don't have a warm place for bread dough to rise, just use your oven. Before you mix the dough, preheat oven to 350 degrees for 5 minutes only. Turn the oven off and by the time the dough is ready to rise, the oven is at the perfect temperature. I also pour boiling water in a cake pan half full for moist heat.

To prevent a cake from falling, don't open the oven door until the cake is at least 3/4 through the baking time.

To prevent cake layers from "doming on top" swirl batter round the sides of the pan. Tap the pan on the counter to get rid of air bubbles.

How to bake easy to frost cakes. For the smoothest easy to frost layers, line the bottom of the cake pan with parchment paper rounds and then butter them.

There are several ways to add chocolate flavor to whip cream. Here are a few tips to try at home. Dip strawberries in it; delicious.

Chocolate Whipped Cream

Whip 1 cup heavy whipping cream until soft peaks are starting to form and drizzle in 1 tablespoon of homemade chocolate sauce. Continue to whip until soft peaks have formed.

For every 1 cup of heavy whipping cream, add:
1/4 cup homemade powdered sugar
1 TBS Dutch process coco powder

Beat on high until thickened, but not stiff; 3 to 4 minutes.
Fold whipped cream into cooled melted semisweet chocolate. Use 2 ounces per 2 cups whipped cream.

And for a chocolate chip appearance, just drizzle just-melted semisweet chocolate into very cold whipped cream, then fold to combine. The chocolate cools and breaks into small pieces. Use one ounce of chocolate for every 2 cups of whipped cream.
